Talk about good fortune. I feel like I know Pam not having met her. I'm a retired opera singer and had to get used to strangers who knew me but I had no idea who they were. One time, early in my career, a man in a cafe kept starring at me but made no gesture toward me. Irritated, evemtually, I snapped at him at which point he sheepishly he asked if I was who he thought I was. I was stunned as I was well known in my business but was not famous. I learned a lesson that day and after that, I would assume that looks were friendly and that some people are shy... Thanks for sharing your experience with us!

Pam I love this long and detailed recipe. I love that you are giving cooking tips for newbies like the pot cover tip. This is how a mom or grandma teaches cooking to their kids, and so many people were just not blessed in that way. Your slow and clearly spoken instructions are perfect. You explain the why’s and how’s without assuming your student already knows these things. Keep up these wonderful master classes!

@@cryptoqueen5962 1 cup water, 1 cup brown sugar, 1/3 cup Brandy. Mix water and brown sugar in a saucepan, then bring to a boil. Once it’s boiling, add your Brandy. Turn down heat to low, and simmer until the liquid reduces by half.

I’m 62 and vegan for 7 years. I would almost cheat for this recipe. Lol. I’m from Pennsylvania but my father was raised on a farm in Georgia. I’ve had a lot of southern dishes over the years, but nothing like this recipe. I’m going to try to veganize it. Thank you, Pam. ❤

My hubby would love this. I am not a fan of cooked grits, oatmeal or any cooked cereal. Not even fried grits. But if I did these might be the ones I try.

I like to make cheesy grits also. I add sharp cheddar cheese (or Jarlesberg), white pepper, and some finely chopped pimentos. I think the addition of the Jalapeno juice is a great idea. I think I'll try that.

Louisiana resident here. Hi everyone! I don't like re-fried grits, but I love grits, especially with alligator sausage. This is the first time I've watched one of your cooking videos, but I do like your kitchen tips. Sometimes there is something new and it's helpful. It surprises me when I read the comments to fine out how many people haven't been exposed to different foods or don't know what I thought was basic kitchen knowledge. Always interesting.

I love that you used pickled jalapeño juice! That and dill pickle juice are two of my favorite things to use where a small amount of vinegar would be appropriate. I've never heard of frying grits but I seriously want to try this. My 5y.o. LOVES grits and she flipped out when she watched this with me. Now she's begging me to make it asap. 😂❤

@@callie403 many are going carnivore for several reasons. Some for blood sugar issues, weight loss etc. I have also seen several going carnivore for other health reasons such as skin issues (eczema), joint issues and general malaise. I guess what I’m saying is the reasons seem numerous and varied. Hope this helps

Help speed up the process... When you lift your cold grits out of the pan, cut carefully to not tear the parchment. Flour, then lift the whole set as a single piece onto a cooling rack. Place a second large piece of parchment on top, and sandwich with a 2nd cooling rack. Firmly grip the two racks together, and flip the whole shebang. Sounds more complicated than it is. Guarantee it will make things go faster, and give ya a little giggle when it works so slick.

@joanfarrell9126 The actual dry ingredient is called Grits. It's similar to a coarse cornmeal, more than likely made with white corn instead of yellow. Hopefully my explanation helps.

Love this recipe and as a novice cook I appreciate all the seemingly common sense details like warming liquids, lightly drying w a paper towel before flouring, the wire rack so they don’t turn soft. These will be amazing full size as shown and as a bite size appetizer for entertaining, really special bc it can be savory and sweet. I’m trying to think of my own toppings or dipping sauces and the list is endless so thanks for the inspo!!! As always, thanks Miss Pam! Every recipe of yours I’ve tried so far has been a huge success!

Yes, to the brandy syrup recipe. My youngest son taps maple trees and makes syrup. He has all kinds of different syrups, even the brandy syrup. His is put into brandy barrels but for us who just use plain maple syrup, it would be amazing to know how to get that flavor for ourselves. I too love grits. And of course, yours look perfect. Will have to do this sometime when I have the time. Mmmmmmm! This would be a great lunch or supper meal with a big pot of home cooked dandelion greens and a few wild picked mushrooms.

Up here in the Ozarks, I make fried grits ALL the time, love em, but I always eat them salty, I don't care for syrup or anything sweet on them (I treat them like hash browns), but I tell you what is DELICIOUS... I take leftover pot roast, finely chopped, and sautee some portabella mushrooms in butter, and then mix those in with the grits, and fry it normally just like you do. It's so good!

When making fried mush I have ran out of white cornmeal and added grits as a substitute for what cornmeal i was short of.. worked great..being of Native American ancestry my family made what was called by Natives as Pon Horse ( spelling of horse might be wrong but that is how it sounds when said) what it was was fried mush with cooked sausage ( not browned but cooked thoroughly)put in before frying the mush ..all we did was cormeal( and part grits for me if short if cornmeal) in boiling water nothing else once done added in saugage mix it together , put it in pan put in fridge usually overnight..slice and fry..but this got me thinking about adding in cheese to it next time I make it..or trying the grits way but using saugage instead if bacon

I am 73 years old my grandmother made these for our breakfast on the weekend. The only difference was that she did not coat with flour but she dipped them in beaten eggs, used Bere Rabbit dark orange Steens syrup next time I will try your homemade syrup

LADY, PLEASE tell me how to make your Brandy Syrup !!! The fried grits look scrumptious. So much so that I can almost SMELL 'EM through the video !!! 😋😋😋 I just love your channel bunches, and, I learned so much about making grits on this video. (I'm 55 YO, BTW. And, I love cheese grits - AND BACON !!!) I never knew how the lid could be placed on top too fast, causing them to boil - over !!! And, that the milk needed to be about room temp to keep your grits from becoming gummy. I wonder, though, if this recipe would work out if you mixed in an egg or two, then fried it just a little longer. 🤔 But, about your method of measuring - sometimes the best dishes are made without measuring anything. I always say that the only time you really need to measure exactly is like when you are baking something like a cake or pie crust. And, the pie fillings can be made to your liking - without having to measure "perzactly." That's a word my Mamma used for saying "Perfectly" and "Exactly" at the same time. LOL ! And another thing to mention about NOT using olive oil to fry with is that it has a low -temp "limit." In other words, it smokes a lot at high temps. Therefore, it's not much good for pan (or deep) frying. At least that's what I've always been told. TYSM for sharing your knowledge and techniques with us. Love your channel bunches 😍👍😻

Never had grits before and I'm lactose intolerant but I STILL WANT SOME! 😋 They just look so good and I love cheddar cheese (thankfully cheese doesn't bother me too much but the cream will unless I take a lactose pill) and bacon so much that I was tempted to bite into my tablet when you held that out. 😒 ...Wouldn't mind the recipe for the syrup either. 😆

Try coconut cream in a can. Let it sit overnight in the fridge and only use the cream on top if you want the best whipped cream ever or for cakes etc... you can shake it up for your "heavy cream" for this recipe too. I make my mom homemade icecream with these and lactose free milk and she always exclaims its the best ever and it's gone in like an hour.😂

That looks delicious! I used to fry up corn meal mush like that when I lived in Kansas decades ago. Can’t find that anymore so have to make it like grits.
