Indulge in the delight of homemade sponge biscuits with my easy-to-follow recipe. These light, fluffy, and utterly delicious sponge are perfect for any cake. I will show you the easiest way how I make this sponge.
Ingredients (for 3 biscuits, 20 cm in diameter):
5 eggs
155 g of sugar
155 g of flour or corn starch
2 g of baking powder
30 g of melted butter
Instructions:
-In a bowl, weigh the eggs and sugar together. Stir continuously while heating them in a water bath until the sugar completely dissolves or reaches a temperature of 50°C.
-Transfer the mixture to a mixing bowl and beat it until it becomes foamy and well aerated, approximately 3-5 minutes.
-Sift the flour and baking powder, then mix them by hand to form a homogeneous mass. Finally, add the melted butter and gently mix until well incorporated.
-Prepare three 20 cm diameter foil molds or metal rings for baking.
Divide the dough into three equal parts and spread each portion evenly into the prepared molds or rings.
-Bake each layer for 13 minutes at a temperature of 170-180°C.
Once baked, immediately turn each biscuit layer upside down onto a flat surface and allow them to cool.
