This is the best cooking method I've seen. He cooks the dough like the Roman Pizza in Teglia, and then adds the toppings with deli sliced cheese first (new havenesque) followed by the sauce. I'm trying to make a grandma slice today with this cooking method.

I've lived in New Haven for the last 20 yrs and I miss the LI grandma slice!! ...despite my great options here. Tonight, I used a Roman high hydration sourdough recipe I make at home for pan pizza. It's amazing for pizza bianco (sliced potato and rosemary) .but not for a crispy oily NY grandma pie. Do you have a video sharing your recipe? I can tell by the video that your pie is what I'm looking for. I'm thinking 63-65% hydration would be no fuss? Anyway, sorry for blabbing.

Keep everything the same besides using 100% all purpose flour. Adding sugar and oil will be good as well for a nice brown crust.

Based on how he handles the dough and the structure of the dough I would guess it's about 65-70% hydration.

Any all purpose flour. Your mixture just needs to contain salt sugar yeast oil and the temperature of the water depending on how soon youd like to use the dough. The rising is the most important part which can take a long time.

This looks good but definitely not THE BEST. I could see inconsistencies all over this video. I won't point every one out but I will say that not poking the air pockets (or not creating anywhere for the air to escape at all) is a big mistake. Imagine getting a grandma pie that claims to be the best in the world and getting a two in air bubble right in the middle of it. That's my two cents haha
