The key is having a round dough ball to start with & enough dough to stretch to the required size. Then the stretching into a round shape is made easier.

A lot of people immediate try to roll into a ball after taking the dough out of the container after a long rest/rise. DO NOT DO THAT. Because doing so will just strengthen the structure again and the dough will try snap back into shape a lot when you try spread it out

Thanks for the video! Those pans you're using, are they possibly the Winco SPP series pans? I've been trying to track down these dark colored pans with the funny shaped corners and I think that's what they are. Supposing they are, have you noticed whether these cold rolled steel pans produce different results than your typical aluminum or stainless sheet pans?

I prefer to use the Ricotta to make a White SAUCE that has a bit of Lemon juice, honey, salt, oregano, basil, and heavy cream. I also prefer to put the Parmigiano-Reggiano on the pizza right after it's finished cooking. You can also add some sliced garlic onto the pizza before cooking, or, just add it into the mixture to make the sauce have the garlic flavor in it. Try it out and make a video if you can, I'm interested to know if customers prefer it the way you make it, or my way!
