After smoking low temp, have you ever used a cast iron griddle pan inside the smoker for searing at all? I assume many people either do that or bring the steaks inside, let it rest, then sear using a cast iron pan on the stovetop to finish.

How many pellet smokers or grills have you tried? I’ll list off the brands of pellet smokers I’ve tried: Yoder, Traeger, Pit Boss, Rec Teq, Green Mountain Grills, and Smokin’ Brothers. I’ve owned this exact Yoder YS640S and I’ll have to say, with all honesty, I was very disappointed. I didn’t like that it wasn’t a fully welded frame. I didn’t like the area where the grease drained because it would leak everywhere. I didn’t like the metal to metal contact on the smoke stack and the hopper lid when opened. My Yoder started rusting within a month of ownership. I couldn’t believe it. Then, the Fireboard controller is supposedly “smart”, but when I did my first “step” program, it wasn’t smart enough to bring the set point temperature down from 250 to 160 to hold my brisket once the internal temp reached 200 degrees. Very disappointing. When the step program went from 250 to 160, the “smart” controller didn’t push enough pellets into the burn pot and there was a flameout! I called Yoder and the representative told me that 90 degree reduction at one time is too much for the “smart” controller and I laughed at him. With all that being said, I respectfully disagree with you and I don’t think the Yoder is even a Top 5 pellet smoker. Let me ask you a question: if you had purchased this Yoder with your own money, would you still think it was “The Best Grill in the World!”? Be honest…IMO, it’s not even in the Top 5 discussion. I have a Smokin’ Brothers Premier Plus pellet smoker and let me tell you, it is a fully welded beast that can do a lot and it actually has a smart controller. I’ve tested the exact same scenario that resulted in the Yoder flaming out and the Smokin’ Brothers did it without any issues whatsoever. Also, the smoke output on the Yoder was weak compared to my SB and my SB is fully welded and costs a lot less. So, if you would’ve paid money and not received this smoker for free, would you feel the same way?

I'm in 3+ years in, fully dressed, used weekly, keeping any of the grills clean is a pain. Had one hopper smolder and one pit fire. Worth the cost He'll ya!

How does the fireboard do In terms of keeping the grill at the set temp and temperature swings? I notice the cooking chamber is not in the the center, but left of center. Does this create a hot spot on the left? I’m curious how consistent the grill does in terms of keeping a relatively close temperature across the grates.

Slightly. The goal of the yoder is to operate like an offset, so the goal is the heat and smoke move across from the pot (left) to the stack (right). This isn't an issue for low and slow cooks typical of a smoker, but if you are trying to cook lets say chicken breasts you might run into a small challenge, and I do mean small. The deflector is thick and does its job well.

I thought this would be the best replacement pellet operated grill i could get given it can reach 600 degrees for searing. I only want 1 piece of equipment to do both. Ive never smoked bbq before so this will all be new to me but im looking forward to many years of brisket, pulled pork, ribs, and steaks!

Cost isn't a con. I've had mine for years and it holds heat like a champ. The primary con you will have is when you go to clean the ash. Total pain and you will definitely come out a mess. Gown and gloves for sure. Other than that, you'll have no complaints.

Steaks I like a reverse sear (sear at the end) so I guess you'd have to take them off and warm up that plate 5 minutes or so then sear them?

Yes, reverse sear is really popular with this smoker, I have yet to try it. I can remove a plate to expose the flame and get a real hot sear

I'm thinking with a reverse sear I'd leave the plate open (off) and cook them over on the other side at 225 for as long as I'd like (110 or so) then crank it up and 5 minutes later move over where the open flame is.....

Best pellet grill for sure, love mine, but best grill? Need to try some Kamado cooking my friend. Pellet grills lack a rotisserie and being able to make a great pizza. Don't get me wrong, not knocking it! Just a bold claim and you knew some weren't going to agree haha. I believe you need a few grills because there isn't one that is the best in all circumstances. It was a good video though, showed off some great things a Yoder can do. Thanks for sharing!

Yoders are great, but you should look at a few other makes as well before deciding which is right for you. Pitts & Spitts, MAK, Lone Star, and Outlaw (my pick) are also worth your consideration before you pop for an A-list wood pellet cooker. Put any of these USA-made units on your patio and you'll wonder why you ever looked at the imports.

Up here in Idaho, though, when I went to the shop, talked with the owner (a Texan) about his design and how he uses the "old technology," watched his guys welding every seam (some of Yoder's seams are sealed with silicone BTW), and then cooked with one for a while, "lame" would be the last word I would use to describe an Outlaw pellet cooker. It's a small company that needs a better website and has trouble filling orders for its very small network of dealers because it's hard to find good welders these days, but those ribs cooking out there on the patio right now are going to be GOOD!

If they give you the grill for free in my opinion you cannot be unbiased because you are incentivized to continue receiving free Yoder grills to review. Don't get me wrong I don't fault you for taking it because ... FREE GRILL RIGHT?! But c'mon you won't fool no one saying you are going to be "fair" in the review. To many youtubers say this and every single time without fail its a positive review. I'm a straight shooter, it's been a year..absolutely LOVE this smoker. I wasn't interested in smoking meats before now it's a new hobby. We just did my first brisket. 100% true I've got nothing bad to say about it. It's like a tank and the results are so good

The cooker is great and usually has good review from owners. It is good looking cooker appear to the male ego for sure. But you don't need to pay that much if good food is what you after. Getting good BBQ is not because of the cooker, it is the cook. He just start BBQ and a new hobby, it will take time to learn. The Yoder doesn't turn an hobbist to a good cook in a short time.

@@Texarmageddon I keep it covered and clean it often, but it's the grease traps and the flavor bars that rot out, not much you can do after 5 years. Thin crappy metal is thin crappy metal no matter how much paint you throw on it. I bought a Webber gas grill just recently, hopefully that will last longer or they'll replace parts under warranty. Something I noticed on the Webber that the cheaper grills don't have is a really deep and heavily angled grease trap, drains really well. Hopefully that will help it last longer

I’d like to take your options on this smoker at face value but I have a few of my own about pellet grills. I’ve owned a Green Mt. grill before and I was not impressed with the smoke flavor it left in the meat. I also have a WSM. This smoker puts plenty of smoke into the meat. Now I’ve wanted a Yoder YS 640 since the days I saw Malcom Reed using one in his videos. I am finally in the financial position to buy one but I need to be convinced that it will impart as much Smokey flavor in any meat just as well as my WSM can.

A pellet grill isn’t going to replace a drum smoker. You’re going to help yourself out if you simply look at the pros and cons of each type of grill instead of WSM vs. Yoder. Yoder wins convenience and still has good flavor. WSM is going to taste better and be a pain to operate. You know this

I have a traeger ironwood 885 and it catches on fire unless you keep the inside super clean (like no grease at all which is impossible). Did you have any issues at high temps after cooking chicken or something greasy? I gotta find something other than this traeger.

I really wanted one of these smokers when I decided to get a pellet grill. First of all they are built about 13 miles from my home. Number two they are probably the heaviest built pellet smoker on the market. I just couldn’t justify the cost. I have no doubt YS is a great smoker. I went with a GMG Daniel Boone that I purchased for one third of the cost of the YS. It has the WiFi and all the bells and whistles. The GMG has been an awesome grill for me. If the YS was even close in price I would’ve went with them.

I have a GMG and there is no comparison between Yoder and GMG/Traeger. While the GMGs do provide great value, the parts are much cheaper chinese sourced crap and tend to rust and wear out quickly. I have replaced parts and repaired enough rust to buy another GMG in 3 years of ownership. GMG software is also not very reliable and provides inconsistent results in the newer versions. its like their software development gets worst over time and not better! I am having to run a very old version of grill firmware in order to cook without temperature spikes all over the place. I also recommend buying a thermal blanket for the GMG because the cheap metal is so thin it provides very little thermal mass and makes cooking in fall and winter impossible without it, and I live in a warm Atlanta climate.

GMG has very good value, Yoder is better if price is not an object. You can get similar taste in food from any pellet grill. Offet gives the best if you have the time. Yodar thick iron rust over time too, just Physics. That mean if you take care of it, cheaper Chinese source cooker last just as good. Its the user not the metal (Except stainless steel cooker). Pellet cooker easy to control the temp, is the main selling point. But maintenance is the worst, wood dust by-product collect at the bottom, need to vacuum out once a while. Ignitor, burner pot, fan need replace eventually, electronic fail and software need update over time. Among all type of grills, pellet grill need the most maintenance. The pellet don't like moisture and need to clear out after cook especially in humid climate. A vertical drum cooker probably the best in price, ease in temp control and no electronic to fail in my opinion.

Excuse me This is a lot of money. Here is something to think about. I have only had three grills never liked propane taste in food . Gave away. Got a Traeger during Covid it's a tin can very dangerous not made in America can blow up gave away. Both of those cost me about $1000. I can now get an American made Grill built like a Tank can smoke anything no flare ups. No blow ups no propane . Organic wood pellet cooking . I was going to a grill called Blazn grills made in America costs $2000 see for yourself the grill makes no smoke but it is called a smoker. For $600 more I can get the genuine article Sear Steaks at 700 degrees. Bake Pies Etc. and use it in the Winter . Hopefully you think of things a little differently if possible. I've had a 640 since 2012. It's a major pain to switch from smoking to grilling with this cooker. The diffuser plate is huge and awkward to get in and out of the cooker, then you have to find a place to put this huge piece of metal. The fire box is not easy to get to and needs cleaned/vacuumed frequently. Yoder does not stand behind their products. The grate inside my firebox warped, this is a known issue and they even made a new and improved version, but will not provide a new one or a discount for the new grate. It's definitely not the best cooker in the world.

Agree. I got rid of mine. Too unreliable and just ate an incredible amount of pellets.

@@gosman949 I bought a Rectec. It’s made smoking meats much more enjoyable. It’s been 3 years since I got rid of my Yoder and I haven’t missed it.

Great review, about the grill grates. If you turn them over and use them as a flat top you will get a great sear across the whole steak.
