I love a good grilled cheese sandwich and after many years of trying different ones, this has to be my favourite. The jalapeños add a nice kick and the sweet nuttiness of the gruyere compliments it so well. Of course my daughter wouldn’t agree and so I make her grilled cheese with plenty of sharp cheddar, each to their own!

Full recipe:
2 thick slices of a soft white loaf
2 slices of gruyere cheese (1 slice should cover the bread)
a few chunky slices of pickled jalapenos
salted butter
Method:
Heat a heavy based frying pan to a low/ medium heat.
Butter both pieces of bread generously and all the way to the edges
With the buttered side on the outside place the cheese slices and jalapeños on the un-buttered side
Place the other piece of buttered bread on top, again with the buttered side on the outside.
Place sandwich in the pan and cook for 2 minutes approx. each side
Or until golden brown all over and the cheese has melted.
The trick here is to cook slowly on a low / medium heat so you don’t burn the bread, but the cheese still has time to melt
