Hey brother thank you. That coconut cream gives it a great texture and thickness. It would be hard to get that texture with any other substitute I think .

I love that better than bouillon. I’ve used the beef and chicken. Works great when you don’t have homemade chicken broth etc. man I do need to make this. I got two butternut squash’s sitting on my counter that came out of my father in laws garden. I’ve never tried the soup but I bet it’s good. Love the addition of the apple and potato too.

Just a hint. So many things in this dish give it some great flavors . I started experimenting with it to try and nail a copy cat version of Atlanta Bread companies butternut squash soup. I didn't nail it but I think this one is better than theirs. So it was still a win.

That looks so good, Jaxx... I have a heavy mug that I think would be great to use... I have not seen that Coconut Crème... I have used the coconut milk many time before. I will pay closer attention whenever I get a chance to get back to the store!! I have got to give this a try!! Only mine will take longer... Maybe, I need to invest in an instant pot!! ;-)

@@CarolinaChrisOutdoors I could definitely see this going down at the Goudy household. I get that coconut cream at wal mart in the Asian section. I have also seen it in the Adult beverage section where you find the drink mixes. That coconut cream gives it a great texture and thickness. It would be hard to get that texture with any other substitute I think .

Silly question 🤷🏼‍♀️ I’ve never used coconut cream I suppose it tastes like coconut? How does that taste in the soup?

I would say it has the essence of coconut but not a full on coconut flavor. You can't really taste any coconut flavor in the soup but you can always just add half and half, heavy cream, cashew cream, or even evaporated milk.
