Oh my~ these look amazing! I also used to make apple fritters, every Saturday~ when I worked at an apple cider mill. We made them as a separate yeast, roll-out dough, then chopped it into cubes w/a bench scraper, same 10 gallon buckets of apple pie filling, which was NOT from the apples at the farm! Same with the regular apple cider doughnuts we sold, which kind of annoyed me, because people who bought them assumed they were from our own fresh apples! Anyhow, it was a weird place~ I didn't last long =) I know that the variants among the nut flours, size of eggs, room temp/weather, etc can surely vary the texture of the dough/batter on any recipe~ as you likely are aware. I used to live in the northwest, now have been in the desert southwest for a decade- huge differences in baking & candy making! I've had to adjust quite a bit.
