It's better to strip mine for diamonds and here's why: 1: if diamonds generate without being exposed to air (like in a cave) less diamonds generate in that vein compared to when it's fully covered like if you find them by strip mining 2: caves are usually small so you can only mine for diamonds a short while until you need to find a different cave. Strip mining works forever so you can strip mine as long as you want and get as many diamonds as you want. 3: if you want diamonds for the first time you usually don't have armour or iron armour so you can die pretty fast in caves even if you are a pro

My favorite way to mine and avoid mobs is to get yourself a nice aqua affinity and respiration helmet. Bring magma blocks with you so you can breathe under water, and look for massive underwater caves. Ores Spawn more commonly when not exposed to air, and since the entire cave is submerged, you find a ton of ore. Add depth strider to the mix, and you can explore huge vast caverns underwater without needing to build anywhere, as you can just swim to every available block

Quick tip, build your base on high mountain so you will get resources a lot quicker (you dont get fall damage when you go back down)

for those who want copper, I would say anywhere from 45 to 85 is best since they usually spawn mostly at the start of caves, they also spawn the most from -30 to 5 for deepslate copper.
