Pie Crust
Sugar 1/3 CUP
Condensed Milk 8OZ
Cream of Tartar 1/2 TSP
Lemons -3
Eggs -3
Carefully separate the egg whites from the yolks
Beat the yolks
Scrape some lemon zest into the yolks
(not too much, it will be bitter)
Squeeze the lemons into the yolk, catch the seeds
Pour in the condensed milk, try to get it all
You can beat it by hand but . . .
. . . A mixer is much easier
Spoon into the pie crust
Then set aside on a baking pan
Mix the egg whites and cream of tartar
Slowly add the sugar while beating on high
This will take a while
Beat until ridges form when you remove the beaters
Pour all the meringue on the top of the pie
Seal the edges to keep the liquid inside when baking
Use a spoon to make ridges in the meringue
Bake at 350F / 180C for about 20 minutes
Remove only after the meringue ridges turn brown
Set aside to cool then refrigerate overnight
