Easy & Quick Roasted Butternut Squash

Butternut Squash- whole
Ground Chicken - 16oz
Mozzarella Cheese ¼ oz
Egg -01
Garlic - one tbp
Hot Pepper -1/8 tsp
Salt
Pepper
Nutmeg 1/8 tsp
Turmeric 1/8 tsp
Rosemary-1/8 tsp
Olive oil 1 tsp
Carefully cut the squash lengthwise
It helps to score a line down the middle first
Scoop out the seeds
Cut a small slice off the bottom
to keep them from rolling over
Brush on oil, salt and pepper
Bake at 350F / 180C for 45 minutes
Parchment paper will help with the cleanup later
Chop up a few cloves of garlic
Heat up oil in a frying pan
Add the garlic
Add the ground chicken
Add all the spices
Fry until completely cooked
Take the squash out of the oven
Scoop out most of the squash
Mix it well with the cooked chicken and the egg
Spoon the mixture back into the hollow squash
Top with a generous amount of mozzarella
Put back in the oven for 30 minutes at 400F / 200C
Cut into two or three slices
(this is surprisingly filling)
Plate it and enjoy!
