Please note! to get the correct smooth consistency you want in the cheese sauce be sure to tempure your milk first otherwise adding cold milk to a hot pan will curdle it! Also note, using sharp or medium cheddar is better than using extra sharp cheddar since extra sharp has less moisture content and does not melt well.

Here's a version I created during my poverty-stricken university years: Olive oil in a pan, fry chopped onions (paprika, sun-dried tomatoes, and bacon are bonus) When onions are fried, add paprika powder, chilli, pepper, turmeric powder, salt, and extra oil. Mix them for a minute then a scoop of pasta water to emulsify the yumminess. Let most of the water steam out then add pasta. Turn heat off then add Gauda or any yellow cheese and Mozarella if you can, mix that in until consistent. Place in oven for a few minutes if you want the top to be crispy.

Not my own bread bc my mom would be annoyed at me for making too much a mess. Not saying much as i make everything from scratch, can’t even dream buying boxed cake mixes.

I made the 2nd mac and cheese dish with a few changes but it still came out well! Someone even pointed out that it was the best mac and cheese they ever had. I rarely make mac and cheese but when I do, it's only from the box. I'm very proud and ecstatic with the outcome. Thanks for the recipe Joshua!

Loved this recipe ! I did my first focaccia last night, it was easy and mostly mess free that's why I picked this recipe. No sticky dough to clean up on my kitchen counter, everything happens in the bowl and it's amazing ! The result is great, and my husband loved it !

I think the high heat breaks down the lactose sugars into simpler sugars. Also, in most properly made cheeses, there is no lactose.

@@blakemedders6564 I found za'atar at my local Smith's, which is the slightly fancier than Walmart local grocery store but hardly specialized, so hopefully it's not too hard to find for you! I've loved mixing it with some olive oil or mayo and cooked salmon and eating that on crackers

Made the family style and OMG it was so delicious!! Only deviated macaroni product and used Cellentani. The flavors and textures work so well together! Hands down, going to make this for every holiday gathering and when I randomly want some LEGIT Mac and cheese.

For the stovetop method you can simplify it even more with a one pot recipe. 5 cups of whole milk bring to a boil and reduce to a simmer stirring constantly then add in a pound of your favorite small shaped pasta elbows work best and continue stirring until almost all the milk has cooked into the pasta then remove from the heat and stir in 8 ounces - 1 pound of sharp or extra sharp cheddar cheese then serve. If you want the taste of a baked mac-n-cheese then just toast some Panko breadcrumbs in a little oil with whatever seasoning you like in a skillet then add to the top of each bowl.

@@professionalfangster1510 it's a Middle Eastern herb and spice blend that's particularly popular in the Levant. Great for adding to olive oil and dipping bread in, topping for hummus, baking on top of bagels, etc. The real stuff has hyssop, sumac powder, sesame seeds, and a few other things. If you don't have it, you can combine thyme and oregano, which won't really come close to what zaatar tastes like, because there's a tangy element that the sumac adds that I can't think of a substitute for.

I’ve enjoyed using the Alton Brown Mac n cheese recipe using eggs as a thickener. It calls for evaporated milk but i used buttermilk and it turned out so good!

Hanazaba Rui I think he used it for taste since a usual mac recipe will ask for 2-5 different cheese’s and nutritional yeast was probably that second cheese flavor in substitute for using another cheese. Nutritional yeast brings out a nutty cheese flavor and it’s used to intensify cheese flavor in anything. A lot of vegans use nutritional yeast as a substitute for cheese in pizzas, pastas, and anything that calls for cheese. Nutritional yeast is a great base for vegan chicken broth because of the nutty flavor and even if your not vegan nutritional yeast is great as a seasoning to add flavor. Hope this helps. @@tati6712 so I made the pasta and it's essentially the same. I added some tomato paste and garlic as well and made it into a red+white sauce pasta instead of mac and cheese. Some veggies too like capcisum and onions. All in all, highly recommended. Its basically a good alternative and lowcal too

I usually do the baked mac and cheese but I season the roux with garlic powder, onion powder, dijon mustard, white pepper, paprika and a little cayenne. Really makes a big difference when you season the roux!

Awesome Mac & cheese in pot recipe but at the end of mine I mixed Panko breadcrumbs Parmesan cheese and butter together and topped it off . Put the oven on broil and browned the top. Came out amazing ! Thanks Joshua

Last night I was having trouble falling asleep and so I was binge watching your videos. Then I came across this one and I realized I had all the ingredients for the first version of mac & cheese. I jumped out of the bed and made myself a large bowl. Amazing stuff! So creamy and cheesy and comforting! @@Beyondblssd That's what they publicly say, but it's obviously exhausting. That's why "youtuber burnout" is a term. You not only have to work those long hours, but you also have to be constantly on the lookout for ideas and look high energy. Josh has said a couple times he's a workaholic and he doesn't mind much, but it can be unhealthy even if he doesn't see working that much as a problem

I made the low calorie cauliflower mac and cheese fully expecting to be disappointed. However, it is delicious!!! I used a combination of extra-sharp chedder and smoked chedder with milk instead of water (because there's only so much health I can stand) and it was great! Will be making again without hesitation

note to watchers: you do not need a roux to make a cheese sauce. you can mix butter, cream, and cheese and you get the same consistency and less powder taste from the flour. yeah you can cook off the flour, but if you are trying to do lower carbs or staying away from flour it works also.

YES! I personally hate the taste and texture of a mac and cheese made with a roux. I always go for the pasta water, cheese and butter for my sauce instead!

Excellent recipe! Interested what your thoughts on the “Boil in Cream” method that Ethan C recently made a video incorporating. To keep it creamy, and I think I got this idea from JKenji, I typically will add a slice of American cheese to the mix to the cheese mix to prevent the other cheeses from getting stringy. In any case, excellent video as always!
