►Ingredients for the Orange Chicken
►Chicken Prep
1.1kg or 2.4 lbs chicken thighs
2 tsp white pepper
1 tsp garlic powder
1 tsp onion powder
2 tsp red chili
1 tsp salt
1.5 tbsp light soy sauce
►For the Orange Chicken Sauce
Zest 1 orange
1 cup orange juice (4 - 5 oranges)
1 cup chicken stock
1/4 cup light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp ketchup
1/4 rice vinegar
2.5 tbsp sugar (taste and adjust to your liking)
6 - 7 dried long red chilies
4 garlic cloves
Small knob ginger
1.5 tbsp corn flour (US corn starch) mixed with 2 tbsp water
4 tbsp oil
Garnish with onion greens/sesame
►For the Dredge
Marinated chicken
1 large or 2 medium eggs
1 cup (120g) corn starch
1/2 cup (60g) plain flour
1 tsp baking soda
1 tsp salt
1 tsp MSG
1/2 cup or 120ml cold tap water
3 tbsp oil
►For Frying
1 litre sunflower oil
►For the Egg fried rice
2 cups uncooked rice that were boiled (a day old rice)
5 tbsp oil
3 garlic cloves
2 birds eye chili
2 spring onion whites
Some green pepper
5 large eggs
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tsp chicken seasoning
1 tsp salt (adjust if needed)
1 tsp white pepper
1/2 tsp msg
1 cup cooked mixed vegetables
1 tsp grated ginger
Garnish with spring onion greens
