The lechon skin that restos serves are a hit or miss. You're lucky if you get the crispy skin since the lechon that was delivered was just off the rotisserry. If you wanted the crispy skin, it's in the Carcar market where they roast the pork there and slice it in front of you - and you'll get all those fat juices flying to your face. Or you need to wake up as early as 4AM in one of those roadside lechon stalls to get the best parts of lechon and experience that life-changing event before they run out.

Lechons are best when fresh out of the fire. The best approach is to know the time of the arrival or the time the lechon gets cooked. Overall the Lechon meat stays warm for quite some time but the crispiness of the skin does not. Also an authentic Cebu-style lechon does not need sauce.

Totally sympathize with Chonny, have travelled the world, but have gotten sick in every country! Only place my stomach was okay was parts of Western Europe. Asia and South America nearly killed me! How is lechon different from Chinese roast pork?

I’ve been to many Asian countries and in my experience, it’s always two things that get you sick. A. The food you ate was out for too long and not heated properly. Asia is extremely humid and hot and most foods are cooked early in the AM and usually sit in a pot or on a tray for presentation. If it’s not heated up enough you can get sick if it’s late in the day or evening because it’s been sitting out all day. Lastly, it’s always the water that you drink that gets you sick too. Always drink bottled water and I always try to skip drinks at night markets because you have no idea where the ice comes from. It is best to bring some pepto bismol or Imodium tablets in your fanny pack.

I been in that place 3x already 1st time i was there i was so impress of there lechon but the 2nd and 3rd was so dissapointing there lechon skin wasn't that crispy and it taste very average the Side Street lechon is much better than House of Lechon. Only the photo looks good
