PHO’RENCH DIP RECIPE
Will yield ~6 servings
Broth
-15 cups water
-1.5lbs beef bones (back rib bones used)
-3 lbs brisket
-1 tbsp spoon salt
-1 1/2 tbsp spoon sugar
-2 tbsp fish sauce (adjust to taste)
-1 tbsp chicken stock or pho stock
-Old Man Que Huong Pho Bac Spice Seasoning (H Mart, 99 Ranch) or any pho seasonings you can find
-MSG optional
Vietnamese Mayo
-4 egg yolks
-1 1/4 cup neutral oil
-Salt (to taste)
Additional Ingredients
-Vietnamese Baguettes
-Mozzarella cheese
-1-2 whole sweet onion (1/2 inch slices) for sautéing
Pho Broth
1. Fill a pot with water and once boiling add in your brisket and beef bones, parboil for 5-10 minutes and then rinse and clean bones. Add clean bones to a pot with 5 quarts of water
2. On the stove (on high) or in the oven (on 400 degrees), roast your onion and ginger (sliced in half) until evenly charred on all sides then add to your pho pot
3. In a pan on medium, roast your pho spices for 10 mins until fragrant making sure not to burn them. Add to the spice bag and add to your pho pot
4. Add in 1 tbsp salt, 2 tbsp fish sauce, 1 tbsp chicken stock or pho stock, 1.5 tbsp sugar and MSG if desired
5. Since we parboiled there will be little impurities to skim, but make sure to remove any that may rise to the top. Cook broth for 3-3.5 hours or until your meet is the desired firmness
6. Remove meat from the broth and thinly slice to resemble roast beef
7. Adjust broth with any additional salt, fish sauce or sugar to suit your taste
Vietnamese Mayo
1. Separate yolks
2. In a bowl slowly whisk in 1/8 cups of oil at a time. Adding too much at a time will cause separation
3. If using a hand mixer, turn the setting to low
4. Slowly mix until you’ve added in all of the oil OR when mayo is the desired consistency
5. Add salt to taste
Sauté Onions
1. 1-2 onions into 1/2 slices
2. In a pan on high add oil and sauté until onions are translucent
3. Remove and set aside for assembling
Sandwich Assembling
1. Slice baguette 2/3 of the way and add mayo, sautéed onions, brisket and top with cheese
2. In an oven or air fryer on 400 degrees, roast the sandwich for 2-3 minutes until cheese is melted and bread is crisp (do not over toast the bread because it will be very hard)
3. Garnish with rough chopped cilantro
Serving
1. Sandwiches can be made ahead of time but just make sure not to toast until serving for the best results
2. Ladle hot broth into a bowl and garnish with green onion and cilantro
3. Enjoy!
