There’s definitely more than one “South” The upland mountain south. The coastal, Virginia Carolinas and Georgia. The gulf. Tons of diversity within “the south”

Nope Nope Nope. In South Georgia we pronounce it like "Pomina" cheese. We tend to skip the "t" sound. We make it with equal parts of sharp cheddar and pepper jack, mixed with your favorite mayo and minced Jalapeño. The secret is to add in your favorite spices such as creole seasoning. 😊

My mom made the best pimento cheese. She wasn’t super into cooking but this was where she shined. From Arkansas and transplanted to DC where many friends had never had it, and they loved it! PS Dukes really elevates this over Hellmans IMO.

Personally for stuff like this (and not a lot of other things), garlic powder and onion powder work better for me _in the long run_. Fresh onion and garlic are great, but in leftover spread they can get "haunted" after a couple days. Granulated garlic and onion powder are not as "fresh" but they bring their own magic, and in fact you can use both fresh and dried for more depth. Or, if you want to be really fancy, you can roast the garlic in advance and then smush/mince it. The pre-cooking mellows it out and prevents the infestation of ghosts.

Yes to addition of garlic and onion powder! Less mayo, rinse and blot dry pimento, maybe sub some cream cheese for all the mayo. Just a suugestion!

@@daborrahbush7870 Well not much; they go a long way. So in maybe a little bowl of cheese like in this example, not more than 1/4 tsp probably of either, probably less. The idea is to add some hints, not strong flavors.

Looks nice, I am glad you did NOT put cream cheese in it even tho you said its optional. For some reason I just cannot CAN NOT get the cream cheese in it to appeal to me. I just do not like it. (to each their own) The onion is a new take on it, I am going to give that a try. I am surprised at watching a couple videos that you all drain the pimenTo juices? I always PUT the juices in it to make it have a flavor lol. Welp, we each do it differently and it is fun to see a different take on it. Thanks

I have been looking at ingredients of store bought pimento ch. and I was shocked to see onion myself. The cream cheese is also an ingredient in all of the pepper Jack pimento cheeses in stores. That surprised me too.

This looks great! And you are very likable. I would recommend you not read comments in the middle of your recipe. I’ve no doubt ppl like myself that just needed a quick recipe will probably move on the moment you start reading comments. I know I did. But I came back and just fast forwarded. a recipe i follow is zingermans deli. you can probably start off with this and add her modifications in (i copied it from the google search result): 1/2 pound sharp cheddar, coarsely grated (we use two-year aged Cabot cheddar from Vermont). 1 cup mayonnaise, I prefer Hellman’s up here. Out West the same mayo is sold under the brand name Best Foods 2 ounces by weight roasted red peppers, diced (about 1/4 cup) 3/4 teaspoon juice from the roasted peppers, if you’re using jarred roasted peppers 1/4 teaspoon coarsely ground black pepper Scant 1/4 teaspoon cayenne pepper, or to taste Pinch coarse sea salt although her version looks like it might use more pimento and more cheese, not sure.

@@phyllissmith4762 what i copy/pasted was just the original recipe/size that a follow. it just looks like what she showed in the video is just 2x what the recipe above shows. because visually, it still does look about the same as mine when it's all mixed up, in the end. ALTHOUGH, since i was going to add in the onion she suggested, that means, for my original amounts, i need to add in, only 1/2tsp of onion. that could have really ruined my batch. i'll make a note, thanks.

a little bit of sweet onion. i'll have to try that. thanks. edit: so i did try it. the end effect came out to being, like a touch of acid in the final flavor. could have the same effect from a dash of vinegar, or a dash of hot sauce. i feel the trouble of grating a little bit of onion is a bit much to deal with.

Excellent instruction. There are a lot of different varieties of pimento and cheese spread,and this one looks very good. As far as the pronunciation of pimento., i grew up in north Mississippi, and I remember the t as being almost skipped over, but not entirely. It was barely detectable, but it was there.

I was just about to come here and say that. Preshredded cheese will work as well. You will just have to adjust the ingredients to make it thicker (you would have to do this anyway since the portions have to been done a little by sight)

I’m in Seattle and I keep going back to the grocery store to get this one pimiento cheese from North Carolina…it is so good, it kicked off my recent weight gain. I had to stop it was getting really bad, how many I was going through.

As a lifelong southerner, I can assure you that we don't all speak like this. Some of us do know proper English. So many "Southern Tubers" make jokes about it and honestly it's not funny. We don't all wear overalls and go barefoot and have no education.

I grew up in Tennessee (near the Smokies), but majority of my upbringing was in middle Georgia. We say the "t" in pimento. SMH. You know the South has various dialects, even within one state like ours in Georgia! I thought a professional magazine like Southern Living would have a more professional video. Please provide an actual recipe in the video. I make my pimento cheese a bit different, but I was interested in learning other variations.
