Ingredients
5lb bag of pork souse meat
3-4 cups -White distilled vinegar
2-cups -100% lemon juice
1
SEASON TO YOUR LIKING-
Complete seasoning
Salt
Cajun seasoning of your choice
Garlic powder
Parsley flakes
Crushed red pepper flakes
1 whole onion diced
Half of colorful bell pepper
1-2 packs of chicken bouillon
Clean pork souse meat throughly
Boil in vinegar, lemon or lime juice and water for about 20 minutes
Rinse, and clean meat thoroughly again
Add in fresh water
Add seasoning and onion and bell peppers
Cook for an hour then check progress
Cook additional hour and a half
Taste then add more ingredients if necessary
Top with hot sauce and enjoy
Caution ⚠️ it will be hot 🥵

I've had souse from NJ to Alabama... All were different, yet cold. It's commonly called hog head cheese. My father was from Virginia, and he used to make it also. If I had known about this soup/stew version, I would have tried it years ago while traveling through Florida and Caribbean. But now that I know, it will be one of the first things I have the next time I visit.

Good morning ☀️ yes it is! Lemon juice, and vinegar is a must for both recipes and you can use regular seasoning to your liking. I add my seasonings at the beginning and then when it’s done i usually taste it and add more . Thank you for watching 😊

In the description you say 2 cups lemon juice and 4 vinegar ..is that in the pot or when cleaning the meat some and the rest later

Great question! I put about 2 TBA of vinegar when I soak the meat before cleaning it. The 4 cups of vinegar is for when you’re actually cooking it and gradually adding while it’s cooking. Then when the meat is done you want to give it a final taste in case you need to add more or less seasoning vinegar/lemon juice. Ideally you’re looking for that kick! Then you know it’s perfect 👍🏾 sorry I took so long to reply have a blessed day luv

Hello 👋🏽 you can ask for pig tails, and pig ears it’ll make a good souse just make sure they cut them into small to medium pieces if it’s not already cut

Hello 👋🏽 I’ve never added tomato paste but I sure wouldn’t knock it because tomato paste does add an extra thickness and flavor. So if you see that someone’s pork souse is red ish, probably because they added tomato paste, and/or hot sauce and even paprika, tbh it’s still all good 👍🏾 and thanks 😊

I asked my 91 yr old grandma about it and she says it’s a southern recipe since the 1700s during slavery days . She said pork and chicken was the only thing available to southern blacks back then. It’s a multi cultural recipe 😊and I learned a little history this morning 😉

@@miamigurltangie0602 Much respect for your grandmother but this is very wrong. If you want to be technical, Souse is originally from Europe in the Middle Ages. When they migrated to the Caribbean and the Americas, they brought their version of the recipes with them. However, some of the first known deviation from the European recipe are pig feet souse in the Bahamas and Barbados. Same way of cooking, different variations.

I used regular seasoning and vinegar and lemon juice that’s all it takes lol I wouldn’t leave anything out luv oh yeah that’s all it took plus the right amount and a person that just simply knows what they’re doing 😉thanks for watching

it’s a joke when someone tell you something that clearly have no idea what they’re talking about lol my description says 2 and a half hours sometimes it’ll take 3 hours of course depending on how much meat you’re cooking too so yea 30 minutes difference give or take and a person who knows how to make souse would know this. re read my description box again luv where the hour came from? it says after one hour, check the progress then continue to cook another hour and a half sometimes an extra half hour is needed but i surely can’t possibly cook souse in an hour

I’m not mad lol but umm if you must know they are not long to me I clean myself just as you would clean yourself with or without nails 💅🏽I cook, clean , type and do hair with what you consider to be long nails

No disrespect, but if you're going to give the ingredients, you should also give the measurements of each. You know, like 1/2 cup of garlic powder, 1 cup of chicken broth or bouillon, etc.... Don't leave us guessing trying to figure it out ourselves. Thank you.

Hello 👋🏽 I understand and I truly apologize. for this recipe it goes entirely by your taste, depending on how much souse you make determines how much vinegar and lemon juice it takes. This was a 5 lb. Bag. I did try my best to edit my description box to help however I add seasoning at beginning and when it's done I add more by tasting it and just adding more if needed. I never measured my recipe. Some might like it more with a vinegar taste some don't. Thank you for your honest feedback 😊

@IMakeMyBacon oh yes lol I hope you get a chance to Try this recipe it’s really delicious and it doesn’t take long to make. You just have to taste it when the pork souse is done to see if you want to add more ingredients like lemon juice or vinegar to your liking and hot sauce is even better ☺️

You can ask for small cuts of pig tails. I’m in New York and that’s what I make mine out of. But I see she adds pig ear and feet to the mix. I may add those tomorrow when I grab the meat to make more.

@@miamigurltangie0602I’m in Brooklyn. I go to a particular meat store that has pig tails. I just today got them to add some pig ear and pig feet to add to my pig tails. A delicious trio of meat. I just know my butcher gets a little annoyed because I ask him to cut the pieces so small. But I tip him nicely for doing it. But the meat store is in like Bedstuy, Brooklyn.
