Made this recipe this morning for breakfast. Didn’t have yucca flour so I used cornstarch (arrowroot not delivered yet). The crepes were very pliable, easy to work with, and a good texture. I’ve made others, but this one produced a better crepe. Thank you young lady!

This is will be an easy and great alternative for you then. You can stuff it savory and sweet fillings. The vegan scrambled “eggs” pair real well with this one. Enjoy it!

I substituted a tbsp of psyllium husk powder for the tapioca and it also worked great. These defo retain their flexibility when cold unlike the ones without the starch/psyllium. When they are made with just lentils they are lovely and flexible when they are still warm but next day they just crack if you try to use them like a wrap. So if you want to use these as wraps peeps, this recipe with the starch added is defo much better.

Alison I appreciated your comment and suggestion. I also did a test with psyllium husk, it works great for biding but still felt that the tapioca added more “fluffness” to them. I also have a recipe for red lentil pancakes and the psyllium husk works great there too, specially if avoiding eggs

Yummy!!! I love it, thank you. My girls were so surprised! They filled them with our berry, chia seed jam, rolled them add powdered sugar dusting on top, they laughed all through dinner. I used potato starch in place of yucca starch, and two eggs, as I wanted an egg flavor. They turned out wonderful. The egg in place of quarter cup. Just in case someone else wants the same. 👍👍

I hope you enjoy them, my grandmother used to make these for us when we spent the night at her home. It was a dish she had in her homeland of Germany.

Thank you, I’m about to try this recipe, I have made plain Lentil flat bread, it’s nice to try some thing a little different. Great for those suffering from Celiac Disease. The gluten free bread you purchase isn’t very appetising, Plus this is a lot cheaper to make, I’ve found the lentil flat bread freeze’s very well. 🙂

I really like this recipe, I hope you do too. When I crave bread in the morning I make the this “omelet” I also posted a recipe for. It’s just eggs, yogurt, tapioca starch and salt. It works for me. I have the recipe and tutorial too. I just didn’t have a name for it. Lol.

I eat whole food plant based for health issues and skip adding any fat to the batter, it comes out fine.

Yes. The corn starch will have a similar binding effect but the tapioca adds more “elasticity”. Potato starch should work as well.

I just made these and unfortunately they stuck to my ceramic pan even with a bit of oil brushed on it! So sad!

@@simplybella_3619 yes, eggs stick too! I have such bad luck with pans in general, I don’t want to use Teflon but haven’t found a good substitute.

I have an All-Clad with a black coating. After trying several “egg pans” we found this one and it still works. I don’t think it’s Teflon. I believe it’s a different material but I could be wrong.
