I still have the Caveman you once reviewed. I ordered from a Menards 11% discount sale. I have to admit that I do not use it often enough with my inexpensive Sous Vide from a Walmart clearance sale. (I once found a bird’s nest in it so I keep it covered or inside now.)

Did a sous vide 5lb ribeye roast to 125 and broiler on high till the outside was charred. Absolutely amazing.

You can do all three. Sous vide it to about 90 degrees, then smoke it til about 120, the infrared til you get a crust. Sounds like the perfect steak.
