Can't believe I just ran across you... you're my new favorite bag reviewer. I have no answer for you on those flat pockets with no volume. Take-out menus? A single pocket notebook from Field Notes? A pocket should have it's own volume (not eat into some other space) or not be there at all.

2 water bottles - Klean Kanteen that is not being made anymore, but you can get Klean Kanteen classic. Extremely durable and great thermal insulation, one of the best in the business. Bonus - very environmentally cautious company. The other is HydroFlask Trail series - one of the lightest bottles with great insulation. I mean, it's like less than half of the weight of Yeti of the same size. So great for EDC backpack.
