I made this recipe with the following changes: I used evaporated milk, and 5 whole eggs only. It came out absolutely perfect. Very light and so smooth and silky it melts in your mouth. ⭐⭐⭐⭐⭐

I tried this recipe to a tee and it came out great.. For someone who doesn't like very sweet dessert this was just the right amount of sweetness Great recipe! I would recommend this

I’m Argentinian and I never thought flan was hard to make 😂😂 idk it’s like sugar milk and egg mix it, put it in the mold (idk the term, in Argentina we call flanera) (also he used a metal pan, but silicone is 100x better sorry bro) then cook it in the water bath for like 10000 years (more like 5 hr) then take it out put in fridge and ye have a blast the next day. My sister is making it right now since we’re in quarantine and we have lots of milk lol

I much prefer a stainless steel pan. I find silicone gives a taste to the flan, in fact anything cooked in silicone. Cooking the flan in the bain-marie (the French proper term for the water bath) is slow, but you get a nicer texture. Nothing wrong in doing it your way, everyone has their own preferences, mine is the classic French way. Good health to all!

Lola exactly I use a blender. I add 5 whole eggs 2 egg yolks, 1 can of condensed milk, 1 can of evaporated milk, heavy cream. Put it into the oven in water bath and after an hour it’s done. Though I’ve never tried making it in silicone. I’ll have to give it a try.

Anna Kakorin caramelize half a cup of sugar until light brow. put the sugar in your pan. then blend 5 eggs, 14 ounces of condensed milk, 12 ounces of evaporated milk, a teaspoon of vanilla extract, and half a cup of cream cheese. put that mixture into the pan. then put the pan into a water bath like in the video. leave it in the oven at 375° for 30-45 minutes.

Can I cut this recipe in half and use about 8, 4 ounce ramekins? The ramekin recipes all seem to use canned milk which seems less desirable

Here I am thinking....is anyone going to remove that white spot in his hair???? I kept watching hoping it's gone !! Only to realize that it's the white eraser of a pencil tucked in Thomas's ear !!!! I'm sorry I really like Thomas BUT this really isn't "flan", this is more of a sweeten creme caramel. Flan as it's know is made with sweetened condensed milk and evaporated milk and anywhere from 4 to 6 whole eggs with also vanilla extract, the "caramel" sauce at the bottom HAS to cover the whole bottom of the baking pan and up the sides a little, this does look good though.

Sounds good but in France which is where the flan comes from, we don't use sweetened condensed mild and evaporated milk in flan - ever

@@nadinemartranchard1768 It actually came from Roam and it wasn't even sweet, it was more savory. The "Dessert" flan does have sweetened condensed milk and evaporated since milk was not "refrigerated" back then as it can be today.

@@marilynalvarez9951 flan does trace back to the Roman's, until it moved to spain and France. But it is originally made with cream or milk. French flan still make it with milk. They did not use condense milk "back then" because condense milk is a 1850s military ration invention, and evaporated milk is a late 1880s invention. Yes they did not have refrigeration, but milk would just be fresh, and used as needed, with the rest turned into other non perishable or at least longer shelf life products. Today, flan is most commonly, and practically always made with condensed milk and evaporated milk. And this method is a whole lot easier and just as tasty as a traditional custard is

I burned mine the first 2 times. 😌 The first time was forgiveable... The second time, I swear, I just turned to grab the pan and it went from light amber to black bitter glass... And left my fingers stained for days. 😒 I was like How the heck!

I tried making the first time. It was grainy and hard, Second time was like syrup, but it didn't go to an amber color like I hoped. The 3rd time was the same result as the second one.

@@Error_707. don't wait for the dark amber like he said. But definitely use low medium heat and watch the pot. Mine never took 5-10 minutes like he said. Also- the amber color will show up when you bake it. Swirl the pot, don't stir the sugar. Then you get grainy syrup. Let me know what happens if you decide to keep trying. 😊

@@Error_707. You got this! 😉 If you want, you can try making simple syrups for tea, coffee, lemonade. Just boil some sugar in water for a minute or 2 until it desolves and the water becomes dark and store in a squeeze container. I would say 1:4 sugar to water ratio. The fun thing is it is up to you. Just so long as it is more water than syrup. A simple syrup is just sugar dissolved in water, not caramel. I use this for lemonade because it is so much better.

I don't think they did. Even when the caramel doesn't fully cover the pan at first, once you place the flan into the oven, the caramel will melt again and set itself to be even at the bottom of the flan. This is why when he flipped his flan over, the caramel covers the whole flan.

I have a question. I only use Just Panela which is a raw unrefined uncrystallized sugar. Can I use it to make the caramel top and if so how can I tell when it's done?

It should work for you. the molasses in your sugar might change the flavor some but I use blue agave nectar both in the caramel and in the custard and it works great.

This is more in the style of Creme Caramel. A typical French version...use of milk, no cream. Creme Brulee use of cream & crisp carmel top- to crack open to eat. Flan in the style "en el estilo Mexicano" is canned evaporated milk, sweetened condensed milk & tiny bit whole milk & eggs with dark caramel on bottom of pan.

Whatever they did is way too complicated easiest way to make flan is get one can of sweetened condensed milk one can of carnation milk 6 eggs quarter cup of milk tbsp of vanilla mix in a blender and pour on top the caramel and bake for one hour takes about five minutes for the whole situation

I had the same fear because as I pulled out of the oven I whiffed egginess. But when I tasted it, it was perfect 👌🏼 was very mildly eggy just like how a pudding is supposed to be!

This is way to difficult, why reinvent the wheel? I do one can condensed milk, use that can add 2 more cans whole milk, 3 eggs 1tsp of vanilla, dash of salt dump in blender and whril away until combined. Pour into Carmel prepared baking dish. Bake in a water bath at 350F for 50-60 minutes, until set. Perfect every time. KISS.
