Your videos are everything to me! I’m a few provinces away from you and just starting my cookie journey as my Maternity leave is ending and I have noooo desire to be away from baby haha. Love love love your videos. Informative, short, sweet to the point and I love your voice!!! I feel like a lot of successful cookiers keep this kind of info from new people, I totally understand it in some respect but then there’s me… provinces away, working a different pool of clients, different strengths, very different style, but things like how I can freeze icing are what will help me to actually make this a viable business because girl I’ll tell ya that is helpful!

It's so funny because I started when I was on maternity leave too hehe! I wanted to make the cutest cookies for my baby's first birthday and it just snowballed from there and now I'm here 😊 I never thought people would be so interested in how I make cookies, because honestly not sure if I do it the "right" way but it's a way that works for me and so hopefully works for others too. I had so many questions and frustrations when I was doing cookies and just wanted mine to be as nice as everyone else's, and I used to search high and low for answers. So I wanted to make a place where someone could come and find all the answers they needed. So your comment makes me really happy and I wish you all the best with your cookie business. There will be good days and bad days but we are our own worst critics, just remember that!

I usually try not to use it after it's been in the freezer for more than a few months. And I try to only use it once after frozen, if I refreeze it too many times I run into this problem!

Love your tips! Do you know why the white icing starts to turn yellow along the edges when I dehydrate for too long or have the cookies sitting out? I read it was the butter from the cookie bleeding into the icing. Does this ever happen to you?

Thank you!! Yes, I believe that's butter bleed. So the icing is absorbing the butter/grease from your cookies. I thankfully never get that, but I've heard after baking people will put their cookies on paper towel to absorb excess grease before decorating. Also not sure if you add white to your icing, I feel like that helps, but I'm not 100% sure. And maybe it's your recipe too, maybe changing recipes is worth it if it continues to be bad? How long can I use the icing? For instance, if I'm decorating a batch of cookies and decide they're getting too sloppy and I need to go to bed! Is it ok to cover all my bags with a damp paper towel for the night, and begin again in the morning?

It usually takes me about 3-5 days to decorate a set depending on how detailed they are. So normally I'd leave them on the counter in a big ziploc bag or I put them in the fridge in a big ziploc bag. I just roll up my tips so the icing is not leaking out. I don't suggest covering with damp paper towel as sometimes the excess water gets in the tip of the bag and gets it kind of wet. And if you see a bit of icing separation (usually happens with flood icing) just massage it back together and it's good to go!

How do you store your cookies overnight to dry?

I usually just leave them on the counter, they should be uncovered to dry fully so I don't cover or store them until they've fully dry

Confession: While decorating cookies, I "clean" my scribe by just sucking the icing off. (Then again, I only ever make cookies for my own household.)
