I'm home sick today but I'm so glad I came across you two on YT. I know Food Network should give you your own show but I'm so glad y'all have your own YT channel since I gave up cable TV (only prime & netflix & YT). Will definitely try. We’re in Jersey, so tomatoes! My mother did a tomato recipe every summer you might want to try your spin on. Easy but delicious. Nice slices of tomato like this. Sauté in lots of butter with salt and pepper. Repeat. Set aside tomato and use the tomato butter remains to build a béchamel, white gravy, country gravy with lots of pepper.. Serve Tomatoes on a rustic toast smothered in the sauce. It’s an end/ middle of summer dish we all craves.

Just made this, it's in the oven. Didn't have Fontina, so used Havarti, Sharp Cheddar and Parm, and herbs from the garden. Smells amazing. Thank you!

From Texas here and we love our southern tomato pies! Enjoyed you two, tons of fun making this great dish. I will be using the roasting the tomatoes tip, I have always just salted on paper towels. Another great herb (I use basil too) is fresh dill - a game changer :)

It’s a version of what the French have done forever. They do a tomato tart and they usually you fresh tarragon and chives. It’s so good!

I just made this tonight and even though they sell Dukes Mayo even up here in Anchorage.. (I grew up on it down south, but it's sold at every Fred Meyer, aka Kroger) in Alaska.. I got to thinking about that INSANELY good chicken & spinach lasagna of yours.. So I put the Dukes away, and pretty much made the filling for your chicken lasagna! (minus the heavy cream & the chicken).. But I used 2 cups full milk ricotta, pesto & spices, parmesan & peccarino, 2.5 eggs, & lots of freshly grated fontina 😋 I had so many fresh tomatoes, that I actually made it into two layers! I had fresh spinach, but since I steamed a ton of broccolini last night, I chopped up some & added it to the pie. Anyway.. With only slight changes (no chicken or cream)... I pretty much put two of your recipes together and made it into one! I'll try it another time with the Dukes, but I gotta tell you.... your filling for your lasagna (even without chicken) makes an insanely good tomato pie!!! 🍅🍅🍅 I couldn't believe how perfect the pieces cut!! Creamy, delicious, YUM! ... I LOVE U TWO!! 😋... ( #with_love2JimmyBuffett & former NM Gov Bill Richardson) 😞😞< Sad day.

Awesome thanks for the recipe looks amazing. I'm thinking of making one very slight adjustment to your recipe. After salting your tomatoes and before placing them in the oven I'm thinking about drizzling them a small amount of balsamic vinegar... because not only do tomatoes go great with basil but balsamic pairs extremely well with them. ....thanks again for the great recipe 😋

I am confused about the roasting the tomatoes in the oven for 40 minutes prior to assembling the pie and then baking the tomatoes again another 45 minutes. Does it really require 40 minute roast? It seems to me that'd be utter mush at the end of being baked for 85 minutes

The roasting cooks the tomatoes down, but then simmering adds to the depth of the flavor. We've never had an issue with it having a bad effect on the soup. It's one our most popular soups on the blogs...many, many rave reviews. Home cooks seem to really love it! We hope you try it and if you do, please let us know what you think!

@@toconnor6811 Sorry about that!! We roast the tomatoes for our Tomato Basil Soup, too! Roasting the tomatoes doesn't make them turn to mush when you bake them. Just enhances the flavor, but if you don't want to roast them...you'll still get a delicious pie! Sorry for the confusion! Hope you make the pie and enjoy it!
