Awesome! Yuba can be made into Thai omelette as well. Just dip the layered sheets in light batter that is seasoned with soy sauce and white pepper, the pan fry. It’s delicious!!

Made this today! I found some vegan "hawaiian" style buns. Michael, I loved using a little mayo before I toasted the bun. It always confounds me: yuba is so thin it always amazes me how long it takes to totally rehydrate. I took some shortcuts however. Used the water, veggie broth and some nooch to rehydrate. Then just a bit of onion powder, pepper and store bought BBQ sauce per your cooking instructions. I skipped the liquid smoke (sometimes it upset my stomach), soy sauce (salt) dry rub (don't have any), and onion. It was so good. In addition since I'm trying to minimize processed fats, I made my slaw dressing with 1/2 cup of silken tofu and 1/2 C (after soaking) of cashews along with your spices. I live in the South and I think this BBQ topped with slaw in a sammich is tradition. Thanks so much, you give us so many delicious recipes!!

Thank you so much for this lovely comment. I'm so glad you gave it a go. For me, this is all about learning the technique so you can riff on it. Yuba can be scary, but once you get a few tricks up your sleeve, it's quite a magical ingredient.

@@MonsonMadeThis I just recently located it, before this even my local Asian place didn't stock it. I think that was Covid/import related. A few months ago I did find the yuba sticks on Amazon and have been using them. I really love 'em. I rehydrate with Not-chicken stock and alternate using with soy curls for stir fries etc. They have a sort of chewy consistency that I really love. But this BBQ was next level Michael!

That looks great. If you can't find tofu skin, be sure to try soy curls. Available on Amazon (and from the Butler's website). Exactly one ingredient: whole soy beans, fiber and all. With the outstanding treatment you gave that recipe, they'd be equally good. Some days, you just need a sammich. You *clearly* needed a sammich. :)

Honestly, I've really tried with jackfruit. I even have a few recipes on this channel with it... I just don't love it. Yuba, to me, is so so much better. Have you tried it?

EXCELLENT VIDEO , just a few options - maybe put a few fennel seeds ( half a teaspoon ) in the pan at the beginning - use vegan pork flavor or some vegan bacon bits just before taking it out of the pan - and maybe a few pieces ( a lot ) of carrot in the coleslaw and a spray of vinegar , but great video !

I immediately thought of lasagne noodles when I saw this. I would be quite interested if you try it as a pasta substitute. Also, I make an excellent vegan BBQ sauce, starting with mirepoix, which itself makes the sauce almost as if it has a meat substitute in it already. By the time I cook down the combo of browned faux meat of whatever kind with the sauce, it's so good, my omni husband absolutely loves it.

that does look VERY much like the real deal. i would know, i'm from Memphis, we BBQ everything here! Thank you for using actual BBQ sauce and not some kind of seasoned up V-8 stuff! i would like to know how this compares with jack fruit BBQ?

I try to respond to every comment as if it's a "real" questions or concern. I normally give people the benefit of the doubt in the beginning. Some people's real honest questions sound like they're trolling me, while some trolling sounds like an honest question in the beginning. Beyond that, I let my Virgo need to be "right" kick in sometimes, and yeah.

With the coleslaw, my grandma always added just a bit of vinegar to hers. Her coleslaw was the only coleslaw I would eat. Haven’t had it in 19 years since passed away. None other taste like hers.

Flavor memories are some of the strongest memories we have. It's so great to be able to take a bite of something and be transported back to a different time and place. Nothing can replace the food she put her love into, but it's comforting to know that her memory is still strong when you think of what she used to cook.

Sadly, finding it is the most difficult part of the recipe. Mylkguys.com sells Hodo brand. But the best and most economical bet is if you have an Asian market near you.

I think I proved that you can. HAHA. You can definitely add it if you want. I get acidity from the pickles, and not having the liquid in the slaw helps keep it from getting too watery.

Wow, this looks delicious. Though I'm never looking for "exact," I really like to find a good "similar." Though I don't eat mock meats regularly, I do want them on occasion and I don't really care about the health aspects, though less fat is always better. I made some sloppy joe's with gardein crumbles and it was fantastic...... Yuba tofu - talk about leaving nothing to waste! Using the skin from tofu!!!

Honestly, it's similar, but this one is a bit softer. The mushroom definitely have more of a chew, where as this is a bit more tender.

“Jackfruit has no nutritional value” Whaaaat? That’s just not true. It’s high in vitamins and nutrients. It does lack protein though except for the seeds. The seeds are high in protein. But to say it has no nutritional value is a false and miseducated statement. Thank you for sharing this yuba recipe.

Eeee... I've seen a few people make it online and I'm not really convinced. Is there one recipe that's better than the rest?

@@MonsonMadeThis I wasn't convinced at first too and wasn't interested in making until someone gave me organic bananas and decided I might as well try! Use peels from bananas that are not yet spotted, gently scrape the inner side with a spoon to remove the stringy bits, tear them into strips, then sautee with a bit of olive oil and when it shrinks down a little add BBQ sauce. I used Stubb's and I was so impressed. It takes a lot of peels to make enough for a few sandwiches but it's so worth a try. My freezer is full of unpeeled bananas now. 😅

I thought it seemed to good to be true as well until I tried the banana peels at a potluck. Everyone loved it and it was the women's first time making it on a whim bcas she had peels from freezing bananas. It was basically shredded peels with seasoning and bbq sauce.

My favorite use for yuba bacon is in spaghetti carbonara. It is easy to veganize with a creamy vegan egg yolk sauce!
