​@user-bf6gz8ej4o there's often Mexican specific groceries / tienda / panaderia / carniceria / etc that will sell any of these spices or dried peppers for perhaps even cheaper than the Kroger subsidiary whatever nearby. Uh. Many Americans are "time poor", that's the appeal of delivery and fast food, no? Delivery and fast food are more expensive usually, especially in the long run, but some people never have the energy to cook for themselves due to disability or what have you and don't have someone in their lives willing to cook for them... and so on. Many have dual income households, some stay at home parents still exist. Etc

@@andrewwashere82 Oh, because my father would prepare it by obviously going to the slaughterhouse and then cooking it in our kitchen. I have vivid memories of being around 8, 9 years old and watch him as its poor head popped out of the large pot. Seeing his eyes, dead. I'm vegan since 1990. From the age of 13. I've always loved animals but at that age I made the connection. They are like us. They also want to live.

@@edyann I’m not vegan but I’d be horrified too. It’s just birria is usually made using short rib, a roast, or oxtail. I don’t think I’ve ever seen a recipe that calls for cooking the head. Because you can’t really shred that. That would be horrible to see though.

Hi, I recommend you to use vegetable shortening in your consomé to replicate the pork lard and the tacos get crispier. You can also use a flavorless oil

I was watching this video before getting to the comments and I thought "yeah, this needs more fat, to aid in the crispiness.." the addition of vegetable shortening, is great idea! Traditional consome is slightly thinner than this sauce and a fair bit more oily, so maybe more stock as well as the addition of vegetable shortening?

I'm so glad you feature Soy Curls so often. I'm lucky enough to have a store that carries them locally and started buying them a number of years ago. Hands-down my favorite plant-based protein. I wish more cooking channels featured them.

Can't wait to try this! The spice blend is perfect. The first vegan Birria I made was from the Views on the Road gals here on KZbin which uses Jamaica (Hibiscus) flowers (trust the process, you won't be disappointed!) and includes a recipe for Chili Oil that is now on my counter at all times. Jamaica flower can be used too. Boil it for aqua fresca. Boil it another time, rinse, add fresh water with a teaspoon of apple cider vinegar to stop the color bleeding, let sit for a few minutes and squeeze water out and ready to use for birria. Turns out delicious too.

I made this again tonight. It’s the second time I’ve done it, having used the sauce for weeks after the last time. It's bloody brilliant. I can’t recommend this enough. Take the time. Find the ingredients. Make the sauce. Your tastebuds will thank you.

Am American but grew up in Jalisco. As a teenager, we used to always to get a 'torta de birria'. Loved it. Can't wait to try this recipe (have been vegan for 6 yrs.), but as a note, we never had it w/ cheese.

I made this yesterday with just a couple modifications. I used 4 Arbol instead of 3 and added two Chipotle Morita chilis, I used a really nice 6 year aged HengShun Zhenjiang black vinegar, used a really pungent TGSEB extra bold black peppercorns and 1 lime with all its zest plus a pinch of MSG. I also browned the soy curls in chili oil before adding to the sauce for 30 minutes. The consume is sublime, could soak a flip flop in it and it would be good. a bit of a hassle to make but worth it. Thanks for the recipe

Made this recipe over the weekend and it was absolutely delicious! The quesatacos were amazing and I could drink that consommé. If you don’t mind messy food, I’d recommend this to anyone 👍🏽 Also, used a different plant-based protein and still got amazing results.

Yes! This by far looks like the best Birria recipe out there! Using it in other formats like the tortas is genius too. I've been trying to replace jackfruit recipes with soy curls or other higher protein substitutes so this is perfect 👌

I had been wanting to try this for a long time! (Since you posted it) So I meticulously wrote out all the steps on 4 large index cards and made it tonight. Very good. I definitely used too much lime juice but it's still good. Mine were falling apart when I dipped tortillas first. So I ended up using flour tortillas and first lightly toasting them - then just basting the sauce on each side. I experimented with heat from 175 to 275 on my induction top. I don't currently have non-stick pans so I found the sauce would burn easily and leave a residue on my iron skillet. So I had to coddle them a lot when cooking but still tasted great. My wife is not into soy so I made her some with black bean and those were fantastic as well! All this took 4 hours but I learned a lot. When I ate mine I forgot to dip them dangit!!! Well I got plenty left over to dip next time! Thanks so much. I may try adding coconut oil or avocado oil to the sauce for better cooking lubricant as someone mentioned. Thanks so much Burger dude!

Wow! I HAVE MADE A DELICIOUS "hibiscus" flower Birria very similarly to this, but yours had more "stuff"! I am so going to try your recipe, I am really excited to give it a whirl. ​@@AmonarayIsalay Hi Ramona! You really substitute the "meat" with dehydrated hibiscus flowers. The texture, after simmering in your sauce, is incredibly meat-like. There is no floral flavor or anything. You could search here on KZbin for "Hibiscus Birria" and where I got my recipe was from a wonderful gal whose name escapes me, but she is Hispanic and makes it often. It was DELICIOUS! You can buy dehydrated or dried hibiscus flowers in several places. I can get them here at my local Winco in the bulk food section. Give it a try, they are lovely!

The Raman …. Use / try Mole with it …. It’s crazy good … similar to Korean black bean Raman …. I use some curry powder to offset the chocolate and give an earthier taste …

I love the use of soy curls instead of the heavily processed faux meats that some cooks are utilizing. I like having some healthy protein so I've never gotten into jackfruit much. This looks amazing! AND I just discovered that Forager brand now makes a queso fresca. I bet that would be good in this. I love to see someone as messy as I am when cooking. IMHO that's why sponges and soap were created.

I think jackfruit is very healthy. But it is not a source of protein, at least not much. That's why I prefer soy curls, clean, tasty and protein rich. Here is some info I found online from Food Insight: Jackfruit is being hailed as a meat substitute because it has a texture similar to pulled pork. The problem with substituting jackfruit for meat is that jackfruit doesn’t come close to being a good source of protein. One serving of jackfruit contains just 2.84 g of protein. That is a mere 6 percent of your DV. While you might be getting a texture similar to meat, you aren’t getting a nutritional equivalent when it comes to protein.

Ahh I've made this before but with jackfruit following someone else's recipe & it was much more work and not worth it at all. This looks so good though. I love the idea of using soy curls. I still have chilies from when I made it so maybe I'll try your way!

You can dial back the spice, and honestly, it's probably about 1 hour of work for about 12 meals worth of food! But I hear you, I'm usually pretty lazy too!

Oh you should try this on pizza! If you haven't been to Oakland, there's Taqueria la Venganza and they once did a collab with Bare Knuckle and did a vegan birria pizza as well as an elote pizza (elote was my personal fave, just because of the childhood memories it brings to me). :) Glad you're on the hype train!! Now you gotta make some tostilocos! There's a series on Netflix where they go to the Yucatán and they have an amazing version that I'M DYING to veganize!

You should make vegan tortas ahogadas next. Similar idea and also from Jalisco I think. Sandwiches that are dunked in sauce.

Really good flavors in the consomme! Unfortunately the dipping and frying didn't work for me; I ended up frying the tortillas in oil and just dipping as I ate, which was delicious anyway. Also I don't care for the texture of boiled soy curls, so if you're like me, a nice hot pan sear does wonders for the texture before adding them to the taco. I also took the opportunity to sear some bell peppers with the curls because I like veggies, and that made them just what I was looking for. I also have a ton of consomme left, which I froze and will use next week to make this again! Thank you for the recipe!

i would note that some "traditional" tortillas that you may find at the Mexican markets, may contain lard, which is definitely not vegan. Always be sure to check!

I felt like I was missing out not really comprehending that I could just make it on my own. I LOVE Mexican food and will definitely try this! Also if you need some bomb vegan tacos in your life go and visit Mexico City, they have the best vegan tacos I have ever had and trust me when i say that I’ve had a lot.

There's a brand called Mi Rancho that I've seen alongside Mission and what not, they are pretty sturdy.

Thanks! It's very savory, smokey and very slightly spicy, but pretty mild overall. The broth is pretty rich and packed with umami, and when you add the cheese it's just the best combo I can think of!

I’m sad/happy because you didn’t make my vegan tacos with the recipe I left on a comment. That’s ok since these tacos look amazing and it actually has given me motivation to get a new laptop (for editing purposes) and start my own vegan cooking channel featuring vegan New Mexican cooking. PS if you coat your measuring spoon with cooking spray then sticky stuff like marmite just slide right off PPS I personally will never tire of hearing you call it “what’s this here sauce”

Nice recipe. Looks tasty. How come you kept calling the broth a consommé? I might be wrong but i'm pretty sure a consommé is a soup made from a broth which has been clarified using egg whites?

Probably what you said was the original meaning of the word but in Mexico consomme (spelled consome there) is just a broth. Kinda recalls that chili peppers were named like that because Spaniards compared them to the original black pepper (pimienta negra) and called them pimientos (male peppers). From that new interpretation came most the new names for chilies in other languages. Just an evolution of the original meaning.

No sweat! 8 - 10 canned tomatoes (plus 1/4 cup of the tomato sauce) = 4-5 canned tomatoes and 2 Tbsp of the sauce!

If you have a Natural Grocers store near you (that's a chain not a description), they carry Butler's Soy Curls on their shelf. I wish they were more widely available, at least at Whole Foods.
