I tried full fat coconut milk, lite coconut milk, oat milk, and soy milk to see which makes the best Instant Pot vegan yogurt! Through trial and error, I was able to come up with two really delicious plant-based yogurts! My yogurt of choice is always the soy milk yogurt but for those who can't or don't eat soy products, the full fat coconut yogurt is an excellent substitute, The coconut yogurt is luscious and satisfying, although not necessarily what I'd consider healthy. The nutrition breakdowns are below!

1 Cup Full Fat Coconut yogurt

I tried different milks and the only that worked for me was the soy milk. I hate the taste, but mixing it with maple syrup and fruits its ok.

I'm not giving up on the lite coconut milk! I think I needed to heat the agar agar more to make sure it completely dissolved. I'm hoping that was the trouble. I'd love to find a soy-free alternative for those who can't or don't eat soy :)

Just found this channel. Coconut milk has a lot of natural fat that will separate from the water. I have found with Coconut milk it’s best to used the canned and refrigerate the can and once cold you can separate the fat from water prior to making yogurt which I feel is a complete waste of money. I completely agree with you that the Soy milk is best.

Finally - cashew yogurt success! 1.25 cups water + 1/2 cup raw cashew pieces, processed in high powered blender until emulsified (5-7 minutes); let the mixture cool down to 110-115 degrees; add starter of choice (I’ve tried three different options and they all worked); use Instant pot yogurt setting for 12 hours and voila, cultured cashew yogurt is in the house!

DaRn! Although the coconut milk didn’t thicken as hoped, the resulting cultured milk can be used in smoothies, curries and such. I’m not a fan of oat milk yogurt either. Thanks for sharing.

If it's GMO and not organic, it definitely is bad for you. However, organic non GMO should be fine
