Looking for a simple, healthy vegan cookie that's perfect for fall? Look no further than these delicious vegan snickerdoodles! These cookies are so soft and chewy that we almost ate the entire batch in one sitting. I've been adding tofu into ALL of my recipes so I subbed out the egg for silken tofu (IT'S AMAZING, just try it) but if you don't have silken tofu, don't worry- you can use any vegan egg replacement or if you're non vegan you can sub in egg. Ingredients:
¼ cup of silken tofu (pat dry)
¼ cup melted coconut oil
1.5-2 tsp. vanilla extract
½ cup of maple syrup
2.5 total cups of flour (In this episode I used 1 cup of blanched almond flour, 1 cup of white whole wheat, and ½ cup of oat but subbing other flour will work just be mindful of how much moisture the flour absorbs. You don’t want this dough to be too wet, but if the dough is too dry to form balls, add drops of water until you’re able to form them). My personal recommendation is to use at least ½ of a wheat flour (whole wheat, white, spelt) and then the other ½ almond flour).
1 tsp. cinnamon
½ tsp baking powder
½ tsp baking soda
Pinch of salt
Topping: a little less than 1 teaspoon cinnamon + 4 teaspoons of sugar mixed together (you can also add a pinch of pumpkin spice to this mixture to give them an extra taste of fall)!
Instructions:
1. Blend tofu, coconut oil, vanilla extract and maple syrup in a blender until it a smooth mixture is formed.
2. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
3. Pour the wet ingredients into the dry and mix until fully incorporated.
4. Roll the dough into small balls.
5. Make cinnamon and sugar mixture and dip each ball into the mixture, fully coating each cookie.
6. Bake at 350 for 11 minutes and then let cookies cool completely before enjoying!
Yield: 15-20 cookies depending on size
