Awesome. Thanks for that. Next time, try to beat the aquafaba until it reaches peaks. Its optional, but you can add a tsp of vinager per 120ml of aquafaba and that will help the aquafaba to stabilize when baking. Just beat that the same way you would beat egg whites. It takes a little more time but it gets there.

@@yassine8935 There's no apple taste if you use unsweetened and here's an exact ratio that you are supposed to use to replace eggs Replace one egg with 1/4 cup of applesauce in sweet desserts. If you want a lighter texture, add an extra 1/2 teaspoonful of baking powder, as fruit purées tend to make the final product denser than the original recipe.

I use a slightly different flax egg (1 Tbsp ground flax + 3 Tbsp hot water), but it's my standard for cookies, muffins, quick breads, etc. I have great success with it in that kind of recipe. I keep saying I'm going to try aquafaba with some recipes that need more of a meringue-type texture. Flax is never going to give you that.

My favorite cookie recipe is Ovenly's secretly vegan salted chocolate chip cookie recipe. There's no egg replacer or butter in the recipe, which means that I usually have all the ingredients at home 😅 The cookies spread nicely and are delicious even without the extra salt on top.

The aquafaba cookie dough is best rolled and baked 30 min only in the refrigerator. Not over night. They do get hard and are not the same. They need to be made right away, after they have chilled for 30 min in the refrigerator😘

I use flax or applesauce. I make awesome peanut butter cookies that taste just like my grandma used to make with a traditional recipe and just use flax for the eggs. For my flax eggs though I use a rounded tablespoon of ground flax and 3 tablespoons of warm water per each. The cookies turn out crispy on the edges and bendy chewy. They just don’t hold the hatch marks, but the flavor and texture is just like my childhood. Great video. Loved the music. 💚

You gotta smash em down a bit before baking if they won’t have that butter spread, and especially if you frig/freez em! I usually make the balls, then freeze those, and then bake from frozen. But with butter, they spread perfectly. I’m gonna modify the doubletree recipe cookies (my favorite!) to vegan, and was gonna try the flax seed method first. I’ll let you know...

That's what I'm wondering. If they go in sooner, they might spread more. Also even if they are sealed, I wonder if chilling it gives the flour time to suck up the moisture, also keeping them from spreading. And maybe to just gently flatten them a little too since vegan cookies sometimes don't spread.

from what i understand, generally you only need to chill cookie dough for 30-60 minutes if you want them to spread out less, since chilling the dough alters the temperature of the fat content. since she used coconut oil, which is solid at room temperature, AND chilled the dough overnight, that's probs why they barely spread. maybe not chilling this dough could have made it act more like chilled cookie dough containing a more liquid oil. still looks great though!

girl... Just FYI I found some "Nasoya" Non Egg Vegan Egg Roll Wraps in Albertsons today. First I cooked up some Jamaican styled red & yellow cabbage & onion with one curry bullion along with other jerk type spices and cayanne pepper because I like my food spicy, well after the cabbage was done it was bomb alone but since I had the eggrolls I wrapped a few and fried in shallow pan of avocado oil... when I tell you I couldn't even wait for the damn things to cool off I am not joking they were slap yo momma good. Please try it I know it will become one of your favs.

I think you are supposed to reduce the bean juice until it gels a little first then cream it. It probably froze so hard because it still had too much unbound water content.

I love that you show the cookie breaking and describe the texture. A lot of times the experiments aren't helpful at all because they leave that out.
