Venison barbacoa is my go to. I love making tacos, enchiladas, tostadas and nachos from all the shoulder meat. Blending in adobo chilis with pepperoncini brine during the sous vide bath is a must. Your sandwich looked amazing. Great content like usual :)

Fantastic recipe! I will have to give this a try. My kids and grandchildren keep me in venison. I'm always making jerky, summer sausage, link sausages, and of course venison chili...but I've never made BBQ out of it and you made this look absolutely delicious! Usually do deer shoulders very similar. Sear over fire then finish overnight in crock pot with some fat, onions, and herbs. Very underrated cut.

Just got done smoking my first venison ham. It’s amazing! I brined it for 6 days and it was an all day smoke. Removing the bone today and putting it on the slicer!

Game meat and smoky BBQ are a match made in heaven. I smoked a venison shoulder a few weeks ago on my Weber using a mix of apple & hickory with my charcoal, then made it into a stew with some beef broth, red wine, and butter, along with some veggies. One of the best things I’ve ever cooked and it makes me wish venison wasn’t so expensive 😔

That looks amazing. One of the best BBQ bites I've ever had was a smoked pulled elk shoulder slider at the now-defunct Campfire BBQ in Seattle, and I imagine yours cooked with the tallow is similar since Stefan basted his meat with drippings from the beef ribs cooking on the rack above.

Great Video. I have been a Deer hunter for 45 years. I have had my share of Venison meat for many years. Unfortunately I have not had any in 10+ years. I still do hunt and take a deer or two almost every year. Had two or three bad experiences with it 10+ years ago. Once was someone had cooked up some bad meat and a bunch of us got sick and the other times was just poor preparation and was very very gamey tasting. I will still try it today but the flash back is brutal.!!! This one may be the one.

Venison does great stewed. Venison birria and chili Colorado are two of my favorites. Maybe a homemade, smoked chilis video is in order. One way to cut down on gaminess is get the deer field dressed quickly and get it chilled fast.

Only thing I can think of to make this better is instead of bbq sauce is a wild mushroom gravy and pickled ramps / leeks instead. But looks amazing and I’m officially starving definitely trying this! Thank you sir
