This is the best acorn squash recipe that I know of. Oven roasted acorn squash encrusted with Parmesan cheese. Simple, delicious, and good for you. Hope you enjoy, thanks for watching.
Ingredients:
Acorn squash
Oil, salt, pepper, onion powder, garlic powder
Parmesan cheese

I roast the squash seeds. roughly clean them, add salt, put on a piece of tinfoil and done in 10 min. Taste similar to pumpkin seeds.

I do the same! I roast all pumpkin or squash seeds, actually I throw them in the air fryer with a mixture of oil and various seasonings. So quick and delicious

I'm a rotten cook. So I looked this up. I see these beautiful squash in the store , never knew how to cook them. Now I'll cross my fingers and give this a try. Thanks for this cooking class.

OMG!! This was sooooo dee-LIH-shush!! 😂🎉 I Ate it ALL -the WHOLE DAMN PAN!! ALL BY MYSELF! Like it was the last piece of cheesecake or sumthin!! Thank youuuu. I’ve NEVER EVER EVER EVEN TASTED ACORN SQUASH BEFORE TODAY… now I’m HOOKED! Grateful!

Great way to cook acorn squash. I used vegan parmesan cheese which I put on during the last 5 minutes of cooking.

Eating the skin of acorn squash can increase the nutrient density of the vegetable, as the skin is packed with fiber and antioxidants

There are some acorn squash in my garden, but none with any yellow. There's one with a withered stem, so I picked it and dressed it up. Currently, it's in the oven. With pumpkins and butternut squash, I've been told that you eat them 2 weeks after taking them off the withered vine. They need time to mature, but the flesh looked fine on mine.*turned out great. yum! - and gone.

Grabbed 20 acorn squash from the Aldi after-hour bin a couple hours ago. Free meal and seeds to plant.

I just made this and it came out great. I went a little too light on the seasoning and didn’t put enough fresh Parmesan cheese but it was still delicious! I’ll also spray the parchment paper next time because all my delicious cheesy crust stuck to it! That was painful!

I’m thinking I’ll eat half and then put the other through the potato ricer and turn it into soup with a little vegetable stock cream and a pinch of nutmeg. Maybe put it under the broiler a bit to get a little extra caramelization.

just FYI, canola oil and all seed oils are seriously inflammatory. you are better off eating sugar

Thank you for this easy and appealing video. I have never eaten Acorn Squash, and was not interested in the sugared recipes. This looks delicious and is one I will try with the Acorn squash I have on hand.

That "Bada" garlic pepper is my go-to seasoning & is a good salt substitute. I would use that one here.

Me too! Never had acorn squash before.. thought to eat ‘in season’ and be more mindful of food overall. My squash seems a bit hard and mostly green. I’m thinking it needs to ripen a bit … in any case, I’m gonna use your recipe when I cook it (God-willing). Thank you for the video.

That looks good! I'm definitely going to try it. By the way, we have a Maytag electric range just like yours and it has a crack by the clock/temp controls in exactly the same spot! I did a double take lol!

Are these any good heated up? I'm trying to come up with something I can make at home and take to my parent's house about 10-15 min away. Could I make this on a sheet pan but then transfer them to a 9 x 13 dish (that's the only travel dishes I really have), and I can pop them in their oven to reheat them but will they be any good that way? Or, are they more of an eat it as soon as you make it or toss it?

Never tried transporting them, but we eat the leftovers warmed up the next day and it is still good.
