I don't miss being a Journeyman Butcher in the Union. Both retail and wholesale, it's hard work especially wholesale, breaking 50 beef a day with a crew of 4 guys. My first job was a clean up boy at a nice full service shop and all the butchers were tough men. They owned houses and put kids thru school. See being a Butcher usta be a well paying job. I was getting $20 per hour in my early 20s. But the world got more expensive and our pay never increased in my time, so I became jaded. Plus all the small shops in San Francisco closed down as did the many chains of Supermarkets and work was harder to come by. I usta be able to work out of the Union hall and pick my own stores and hours and make a dollar extra per hour. Glad I'm not cutting meat anymore.

I still see so many right handed butchers cutting to the left toward the hand.Could be I am wrong but I was taught to cut away from my body.Good skill though and top qaulity.

If you are skilled you dont need any of the for mentioned. Ive been a butcher for 5 years and do not need gloves nor gauntlets. You lose the feel of the blade and bones wearing gloves.

Could see them bones as joints so much meat left on them. And he should be cutting away from his self….. not a true craftsman but a Jack the Ripper butcher messy one to!!!!
