Back in the 1970s, Damiana Bravo’s Brooklyn kitchen smelled like mole all day, every day. Recently arrived from Puebla, Mexico, she sold the special sauce to coworkers craving a taste of home. As word of Damiana’s culinary magic spread, the orders got bigger and bigger. Now, decades later, Damiana, her daughter and granddaughter cook up nearly 2,000 pounds of mole a day at Mole Poblano Asunción Corp. Made from a family recipe and infused with loved, the mole brings a bit of Puebla to supermarkets, bodegas and restaurants all over the New York City tri-state area.

to whoever has never tried this and is saying it looks gross. try it whenever you have the chance too, made by somebody from puebla or oaxaca. this is one of the best dishes I ever had in my life! you have so many flavors in your mouth it’s really hard to describe. amazing amazing dish when made correctly.

Tbh aint gonna lie, it's a very acquired taste. I personally don't like black mole cause of the taste of sweetness with savoury but that doesn't mean it's bad. I personally like red and green mole better

I live in Mexico City. I've had authentic mole several times. I don't care for it. I appreciate the work, but the flavor (to me) is overrated. It's bitter and overwhelms everything else. I've got some mole in my refrigerator now. I'm making chicken tomorrow. Everyone else can eat it, I'm eating bbq sauce!!

Oh my goodness it looks EXACTLY like how my grandma makes it. My family is from Oaxaca which is the Mexican state next to Puebla and it takes a lot of love, patience, and time to make mole. It’s something so special to my heart I love this 💕

Very cool family...so happy for their success. 👍 Took day trip to Puebla when I visited Mexico City and they definitely take their mole seriously. The traditional chicken mole you can get anywhere is super delicious.

I never new of this and I live in NYC. My parents are from Puebla, my moms mom made the best mole and I’m really sad that I’ll never be able to taste it or see her again. Watching this made me remember of when we went to the markets to buy the ingredients, her toasting them and just watching her make this for me and my sister when we visited. I wish I was older when I went so I would’ve payed more attention instead of just wandering around but it is what it is. Thank you for making this, maybe one day I’ll find their mole and try it out, since I live the Bronx.

Lmao its an acquired taste due to the complexity of the flavors. Most people don't enjoy salty , sweet , savoury food in one dish. I had a plate today and its the only recipe i have liked. Btw im Mexican and have tried many. Sheep stomach also an acquired taste super popular in Mexico.

There are several legends that surround the creation of this stew, one of them the most famous is the one that ensures that the mole was created in the Santa Rosa Convent in 1681 by Sor Andrea de la Asunción. According to what they say in the convent, the nun created the mole with divine inspiration. The aroma that arose when preparing it spread throughout the place and it was so incredible that the Mother Superior broke her vow of silence by exclaiming: "Sister, what a good mole!" The other nuns laughed and corrected the mother saying: "It is said muele (grinds)." On the other hand, they say that the mole was created by accident at a dinner that was going to be made for the bishop. The legend says that Fray Pascual - hours before the banquet - was going to put some chili peppers and ingredients in the cupboard, but accidentally stumbled into the pot where the turkey was cooked (which was going to be served at dinner) and that's how the mix was created. We do not know the veracity of these legends, because mole is a complete dish whose sophistication is not improvised and with the passage of time the recipe has been perfected and not only by the ingredients but also by the history and culture that it entails generation after generation . The ingredients of mole vary and in each house they do it differently, but what they always carry (at least in Puebla) is: ancho chili, mulato chili, pasilla chili, chipotle, cloves, allspice, cumin, cinnamon, anise, chocolate, peanut, almond, pecan, seeds, sesame, raisins, tomato, tomato, garlic and onion. Let's say that this is the base, then everyone grinds it and season it in their own way.

Mole is the main dish, traditionally. Normally it’s poured over meat, chicken, pork, turkey, etc. Mole over chicken with a side of red rice is how I grew up eating it... there are a lot of mole types too, variations include different colors, flavor profiles and sweetness!

Nazee definitely rice, you can also pair those with beans. You can add meat to the mole too my family usually puts chicken in it. The rice and beans, hard boiled eggs, and sometimes if we have the ingredients chiles poblanos. It’s a big chile that’s toasted(?) to get the skin off. Then if you want you add cheese in it, you put it in an egg batter (whites are whipped and some yolk is added too) then fried. Mole can definitely become into a really big dish.

Depends on the mole. They are various types. Mole negro, rojo, poblano, almendrado (my fave), and many more. Buy mostly a tangy and lightly sweet flavor. It can go whit most meats and I really love rice mixed whit mole in a tortilla for tacos.

D I wouldn’t consider it a spread. Although my mom would just put some of it in bread and eat it. It’s kind of like soup??? They do come in small packages but you just add water in it and can put it in a big pot. You can add meat to it, pair it with rice or other ingredients too.

Yeah the word covers a wide range of sauces--I think the word used to just mean "sauce" (think "guaca-mole"), but I think of it as more like a thick curry as opposed to what a European or American might think of as 'sauce'. But you don't eat JUST mole--it often has chunks of meat simmered in it, or it's poured over meat, or you eat it with rice or tortilla or something.
