I just binged watched that Netflix series of his. Fully agree. He WANTED to teach them, make them succeed. Not "let's see how creatively they fail" like it's a lot in those competitions on TV. The first episode the team was not getting this, it seemed to me. Cos they wasn't expected it. And I loved every minute of it!! It's incredible! The artwork... I wish that last piece of Juan's...I wish he had had the time to perfect it. It was so phenomenal!!!❤❤❤ Really an incredible special. This was something entirely new on my screen and I loved it! Thank you Chef!!!

Looks like a delicious treat. One thing you could also try is making a sugar glass wire frame with a solid base. If you cover everything but the tips, you could place the exposed base on an LED, multi-colored light source and make it look like edible lights. The sugar glass wire frame, in theory I guess, should act like fiber-optics. It won't illuminate like the real thing, but it'd be a pretty cool trick to try if it hasn't been done.
