You are living the dream mate. Love your family and vids, my 6yr old boy and I love to sit down and watch episode after episode. Been trying to convince the missus to get a caravan and start exploring Aus. One day it will happen, till then keep the vids coming as we love em.

My caravan that's being built has been delayed quite a few times now.....not that I can go anywhere but that's annoying me more. Yum! Favourite meals in the van are BBQs and stir fries in a wok. Yes a wok is a bit bulky but you can cook just about everything you can cook in a frypan an more.

hot tip mate, cook your garlic (fresh) in a pot the add your rice and water and simmer, the garlic flavour through the rice is soo nice once added to the meal

My favorite meal done on a recent trip. Beef brisket slow cooked in my travel buddy oven, shredded into couscous with sauteed capsicum, beans & onions- washed down with a nice Shiraz from Logan's wines. The misso loved it so much she volunteered to empty the potti at the next dump point.

That's the same we do. The Sri Lankan curry is a good one for the kids and I always double up on meat. Husband likes it more spicy so adds chilies to his. Same for fried rice except my guys like sweet soy and if I'm lazy I chuck the beaten egg in at the end and stir like crazy and I chuck in any leftover meat or prawns etc. Good fridge clean meal. Yum, think I know what's for tea tonight. Love the vids, you're living the life I wanted to do when the now grown kids were little but couldn't afford anything above very basics. We managed to do some epic camping trips in Qld and top of NT but an opportunity came up for a van and we are off early next year, hopefully heading to WA from Brisbane. Thanks for all your inspiration.

Pretty similar to my fried rice except I usually use hard boiled eggs and a bit of Clive of India curry and Chicken Stock powder. Soy sauce is my favourite and fried rice would't be the same without it. Since hubby and I are now on the road too, I will be doing the eggs the same way as you and using the packets of rice too. Fantastic idea. You guys and especially the kids are so very lucky to be doing this. Keep on living the dream!! :) Cheers, Ann.

Hot tip! Add a chicken stock cube when frying off the bacon (and I usually add onion too) 👌. Fried rice is def one of our go to camping meals, will try the packet rice next time, looks super easy!

Use long grain or jasmine rice instead of the basmati and add a tiny little bit of chicken stock powder, try that and see if it's not a whole different level 😁

japanese chicken curry, it's so simple and absolutely delicious, the curry can be found in the Asian section of Coles and woollies, its quick and easy. fry onion and garlic, add diced chicken thigh and add "golden curry" melt curry add water and when chicken is cooked it's done! add with rice and enjoy with a glass of sauvignon blanc!
Your cooking tips up until now have been good. Stewing Chicken for 2 hours?
