When you hit round two in that pan I was like... Whats he going to deglaze that with? Hope he doesn't leave that flavor behind. Then I saw that coconut milk in the lower left of the video. As soon as you dumped it in and started scrapping... Like Pavlov's Dog, my tastebuds lit up. I've never been so jealous of coconut milk in my life. I saw it change color and I could taste all that goodness through the screen! Tell Mom this is another dish she could use one of those mailbox zucchinis in :). PEEAAAAAAACCCCE! You know what... WAIT! Can we talk nutrition for a bit. Yes, this dish may be higher in fat from the coconut but this dish is also LOADED with iron, calcium, vitamin C, B vitamins, magnesium, and those chickpeas have 39 grams of protein per cup. We haven't even touched on the value of the turmeric and ginger! Microbiome... The American Gut Study suggests eating more than 30 different types of plant foods a week for a healthy / diverse microbiome. All ingredients in (including spices) this dish contained 15! i'm not a vegan...yet, but this recipie was great: it smelled wonderful while cooking, tasted great and as promised, left me feeling good. No heartburn. No indegestion. I'm seriously considering going in this direction with my cooking. My diet was already very healthy, but this is another level. There could be some answers here for me. Kudos, Chef Andrew.

I made this tonight, but I put my own spin on it. I used kale and spinach. I also added chopped up cherry tomatoes (yummy). I used organic curry powder because it has the turmeric in it of course. It was delicious. Thank you!!

I’m neither vegan nor vegetarian, but was interested in eating more healthy, more often with an emphasis on anti inflammatory foods. THIS DID make me feel great! My head was swimming with endorphins and my body felt tingly all over for like an hour after I ate it…and oh by the way…it was delicious!!! Thanks man for creating this!!!

Your body feeling "tingly all over" is not normal. Sounds like you were trying to process a lot of the toxins from the ingredients.

It’s algebra. You increase the surface area IE spread the food out more allowing the heat to get to the food faster

Thanks Andrew. This recipe is right up my alley! I'm a pancreatic cancer survivor and I've only recently come across your channel and I'm so into the foods and flavours that you are using. Anti-inflammatory ingredients seem to sit best with me at the moment while I'm re-learning that my body can tolerate and thrive on. I'll be trying this tomorrow and I can't wait!

Tried the recipe and it was perfect man.....i added some fresh lime juice and zest to it, definitely compliments the coconut while adding acidity which is what i thought it lacked in the first place. I also used a bit of cumin (just a pinch) to bring more boldness in to the picture. I highly suggest adding those two ingredients when you make this for yourself again

This is cooking for the future. I've been eating anti-inflammatory foods for a while and it's been so helpful for my distressed liver. More doctors need to admit this but sadly they don't. I feel so much lighter and brighter mentally eating this way.

Bro you literally made typical normal indian house lunch.. This looks sooo good!! I make something similar to this, but instead of rice I use a baked sweet potato. Cook the chickpeas with the kale, coconut milk and other ingredients, then add the zest and juice of one lemon along with a few sun dried tomatoes. Pour it all on top of the baked sweet potato. Yum!!

first video i see of yours and i gotta say... i really like the going in straight for it, no commentary overlapping with the cooking or anything, it felt peaceful and very satisfying to watch. oh and of course it looks absolutely delicious! only downside for me is that my partner has the pallet of a kid so i know i'd be making this for one haha

I just made this. They had fresh turmeric at the market when I went for rice and I used the fresh turmeric and ginger. It was GOOOOOOOOOOD. Super filling and easy. Loved it. Adding to my regular rotation

My pre-made rice was brown rice with a variety of Indic spices and portobello mushrooms, and I swapped coconut milk for coconut cream. Cabbage was on sale so that was my greens. This was delicious and made enough to pack into single serving containers. Thanks.

Great recipe! I doubled the fresh garlic and fresh ginger, loved the flavor! Also added some extra spices (curry paste and sugar) for even more flavor. The crispy chickpeas are a nice touch, make sure they’re crispy before moving on to next steps

Didnt have all the ingredients at home but it was still really good and the roasted garlic?? Game changer. My tummy cant handle raw garlic and the roasted version was just fine! Thank you!!

I think I’d double down on a curried rice since the chickpeas are so versatile and add in some awesome extra spices. However, adding the kale into the rice was so dazzling! You earned a new subbie!

I made this today! Was the first ever meal I ever cooked. I couldn’t find kale and improvised and added corriander instead(not too much though). It’s soo good. Thankyou so much man. 10000 thumbs up! I swapped out kale for spinach. I added roasted cashews as a topper. I added a little cumin too. Pine nuts could be a nice addition. Great recipe, the whole family liked it.

Speaking of garlic, do you ever buy a bunch of garlic and ferment it? I've had it keep in the fridge for over a year that way, remaining firm enough to slice or grate, and it does something truly magical to the flavor. Sort of opens it up. Not sure how else to describe it. I love it so much; I almost never use fresh garlic anymore. Also, I learned by accident that using pink salt in the brine causes a chemical reaction that turns the garlic a pretty shade of blue throughout. No difference in flavor at all, it's just kinda neat. Just wanted to share. 🙂

I want to share this tip with everyone here. An amazing replacement for a flax egg 🤮 is using chia seeds and water. I use this in baking and huge difference! The chia seeds have to be ground up first. It also gives more nutrients 👍🏼💚🌱

This is one of my favorite quick and healthy recipes. I love it so much that I have different iterations. I tried it with chick peas. Then the second time I made this I used some dark meat chicken….as delicious both times I made this, the third time, I used Chinese chili sauce and to balance the heat, I used two four oz cups of pineapple chunk! WOW! The pineapple surely not only complimented the coconut flavor but I had guest for dinner that were literally liking the bowl. 😅

This dish looks really delicious, this video is going into my "you need to try this" playlist for later use 🙂 Also, I really appreciated how you explained which other ingredients could be used. I'm not a fan of kale or coconut shreds and probably would've simply left them out, but almonds and spinach sounds like an amazing alternative

just made it with spinach (and didn't have the coconut flakes) and I have to say as a newly "forced" vegetarian..this was damn good, I did the Playlist for later too on this lol

I had this recipe bookmarked for months. Finally made it, and it's a winner! You're right about not using fresh rice, it does make it more moist, and I used short grain but basmati might be the better texture. The next round I'm adding hot red peppers and peas for more veggies and color. Thank you for the great videos and healthy meal options!

Being a Sri Lankan, coconut is a HUGE part of our food culture- curries, condiments desserts EVERYTHING. And finding newer and better ways to make delicious food like this is just AMAZING. This got me so excited given how LAZY I am when coming.

My partner has Crohn's, making this for sure soon! Also how do your stainless pans seem so nonstick? Every time I try to use mine everything sticks to it, let it preheat until water skips along it and everything....

I completely get that. It really does depend on the type of stainless steel you are using, since all stainless steel isnt the same. There is a few different grades. So this cuisinart is linked in the description under "pots/pans". I have a few, some from Calphalon and from Cuisinart and those ones i use often when looking to minimize the amount of oil. My method is to preheat without oil (about 2 -3 mins), add oil and preheat until the oil reaches the skillet temp (1-2mins), then cook from there. hope that helps!

Inflammation! Something I'm always striving to not have in the body. I had told you I have problems with beans, it's the same thing with chickpeas, but I tried those tepary beans and I have found a winner. If you are intersted in giving them a try I ordered them from Ramona Farms. No intestinal gas or bloating with them. I love coconut rice, this reciped looks so good. Thanks Andrew!

My aunt taught me the family curry recipe from North India and told me to add the garlic and ginger last when sautéing and the second the ginger sticks to the bottom of the pan to add your liquids as both burn very fast.

refined grain are not but whole grains are anti-inflammatory such as whole grains include millet; basmati, brown or wild rice; quinoa; amaranth; flax; wheat berries; barley; steel cut oats and buckwheat. Brown rice is being used in here.

I did not have all the ingredients, but I made this last night. My goodness, sooo good. Everyone ate it and enjoyed it. It tasted like a restaurant meal. I did not tell mom there was kale in it, but she still loved it!

I actually made this dish this evening. I have to say it is the first recipe I have tried that actually delivered. Flavor, anti-inflammatory and feel great. Thank you. First time in many months I did not have the bubble guts after dinner.❤

That's a very interesting flavor pallete. The ingredients used to cook the chickpeas wasn't too different from hummus, save the onions and the frying. But the addition of the coconut is what threw me. Granted, I'm SE Asian, so I'm used to using coconut, but chickpeas + coconut is a new combo to me. Might have to try this some time.

i asked my parents what they wanted for dinner, and they were talking about anti inflammatory food. so i found this video, and they absolutely loved it. only thing is i did add two small chicken breast, cut up, and seared in a sperate pan. the spice ratio was perfect, and it was awesome
