My recipe - a very old one admittedly - doesn't use icing sugar as well as the condensed milk, especially as the condensed milk is already sweetened here. The other tip it advises is to split the milk in two, colour the milk and then add the coconut to each portion depending on the colours chosen. Tastes lovely as well, I remember mum making it for Xmas decades ago and it was sweet but not too sweet. Think I'll give it another go this year, in the new year. Thanks for the memories.

In Costa Rica we make something similar called Cajetas de Coco, but instead of adding powdered sugar, we add powdered milk and a little normal sugar (if needed, avoiding making them overly sweet, the condensed milk is usually more than enough.

I’m with you! If you’re going to eat goodies at Christmas, don’t count the calories. Either eat it or don’t. Personally, I don’t have that kind of willpower! This recipe looks amazing and the fact that it’s a time-saver is a big bonus! I believe I’ll make this for our family get-together and color it in Christmas colors. They are absolutely yum and hard to resist Geler. We are using desiccated coconut in this recipe so you can store them for about 4 days at room temperature and them it’s advisable to refrigerator them. Enjoy!

How many pieces does this make, Wendy? I don't have a square tin with a removable bottom, what is an alternative that you would suggest?

Nancy it should make around 30-36 pieces. No problem if you don’t have a loose bottom pan just line the cake pan with parchment paper like I have shown in my video and use the hangover to pull it up. Enjoy!
