Funny thing is that a "pakora sandwich" is a real thing in South Asian fusion cuisine. And no, that isn't pakoras squished between bread, it's basically as you saw. A basin(chickpea flour) battered and fried sandwich with the filling of your choosing.

A different take; Two slices of fried bread (literally, shallow fry white bread in vegetable oil. Fundamental to the best kind of English fry up breakfast) Mould your very nice tuna salad into chicken tender shapes, and freeze. Tempura batter your tuna tenders and fry hard, at least 350f, maybe 370f. Make a sandwich. Done. There's a strong possibility adding tartare sauce, or at least lemon juice, somewhere in there makes it even better.

I can understand the hate for the tuna straight from the can. What I don't understand is why you don't put the Tuna in a colinder or strainer, rinse it under cold water until the water runs clear, then press most of the moisture out. Taste 10x better that way...

I actually tried frying a grilled cheese in the leftover oil from mayo about a year or so ago, wasn’t too bad it just tasted a little funky from the egg but I think if you can properly heat control the separation and not allow the egg whites to overcook, you could have a useful condiment.
