The Coffee Clock!

I finally made the clock's step-by-step video!! The Coffee Clock was one of my oldest pastry design created in 2016. it is composed with a double chocolate chip cookie, a moist Hazelnut/Coffee Financier sponge, a soft coffee cremeux, a delicious soft coffee caramel and a light chocolate mousse. All the decorations are crafted with a 70% Dark Chocolate.

Wow...Monsieur Amaury Guichon, here's what I learnt, 1st Step: You made a delicious moist hazelnut/coffee financier sponge (egg whites, no raising agent, I think), 2nd Step: You added a molded soft coffee cremeux, on top, of, the moist hazelnut/coffee financier sponge, 3rd Step: You piped a delicious soft coffee caramel, on top of the 2nd layer, 4th Step: You added a delicious molded light chocolate mousse, on top of the 3rd layer, 5th Step: You added a chocolate glaze, 6th Step: You added a double chocolate chip cookie, on the base, of, the, Coffee Clock...And voila, the Coffee Clock is born...This composition would be one of my favourites, cos, I love dark chocolate, esp. 70% & above...I think all the flavours, esp. coffee with dark chocolate, is, a marriage, made, on, heaven & earth, they, go, nicely, with, my, favourite, hot drink: milk+coffee+dutch cocoa+cinnamon+turmeric & brown sugar lol...I wonder what this Coffee Clock, would, taste, like, if, you, soaked, the moist hazelnut/coffee financier sponge, in a red cherry sugar liqueur, and, added, a kirsch liqueur in the light chocolate mousse. Why, you would need to convert the Coffee Clock, to, a Black forest Cherry Coffee Clock lol...Anyway, your creation, is, perfect, if, I was privileged enough, like, Prince Fazza, to, taste it lol...In fact, I've always eaten, mainly, dark chocolate...I buy only dark chocolate 70% - 80% - 92%, sometimes, white chocolate as a treat...In fact, here's a challenge, mein freund: my raspberry balsamic vinegar caramel recipe, mentioned, in, my, 2 CKCTV LTD KZbin Channel, in one of my shared photos, is, perfect, to, insert, into, your, Coffee Clock, that, I'm enjoying right now as a spread, on my homemade, DIY cake lol...Merci beaucoup! 🤴🌹🇨🇵🌹🤴🙏
