Per demon lore, a demon will latch itself onto anyone vulnerable, espectially if they are invited in (like through a ouija board). This particular one being after Ed Warren isn't specifically stated, but he and Lorraine have been involved in exorcisms before and helped lots of people being haunted and demons might know who they are. The demon had a shot at them and took it. Lorraine only knew the name because she's psychic and had visions. Otherwise, they'd have never seen it coming and may have been powerless to stop it.

There's actual footage of the voice seen with the camera crew from back then. Also the police who investigated when called out to the scene confirmed the chair moving, the female officer did suggest that what happened wasn't anything they could help with. The police also went on record with he story backing up the family's claims. Doctors and ventriloquist's also were called out to observe the girls they showed no signs of stressed throat that you would get from faking the voices they were perfectly healthy, ventriloquist's also said they voices were impossible to fake. Janet to this day is troubled by the events and when you see her on TV she appears frightened and spooked like someone who's been really traumatised, she doesn't do many TV appearances but she has and usually only to defend her and her families side of the story.

However I do think films like this hurt the families side of the story, because the Warren's were not there for long. This story also is heavily fictionalised from the real events.
