The wind changes direction at different altitudes, so by monitoring wind direction, altitude, you can theoretical steer left and right but always with the wind. Also the difference in temperature between night/day and land/water is generally and controlling factors for wind pressure system changes in turn directing the wind. For example they take off in the morning because it's colder outside and hot air wants to rise more.
