Cannot be over-emphasised how much time and trouble is saved by having all your ingredients laid out before you start. Mis en place. No last minute panic, no over or under cooking elements in the dish. Literally no skill required - just process. That said, I am more impressed by your son being so into mushrooms. Admittedly, mine are a little bit younger but it’s more like garlic to a vampire. Constant lies as to what the small bits are will prevail.

Your presentation from my view point is great for all cooks but particularly instructive for people learning to cook. Streaming the spinach in the microwave saves pots and pans. Parchment paper use especially roasting the mushrooms in the oven on a Parchment covered uncrowded sheet pan saves on washing up. These tips help with avoiding a big sink full of clean up for a new cook. The mess at the end can be a deterrent to cooking. Thanks so much. Keep cooking.

Love the way you go over the ingredients. Far too many cooks/chef's just read them off quickly and half of them don't even give you a printable recipe. If I have to sit and rewatch and pause over and over I won't make it. I've stopped watching some KZbin cooks because of this. This looks fantastic. Hey Jim, I'm currently lying in bed recovering from a surgery. I'm in a lot of pain and concerned about complications, but for now the worst of it is over. I wanted you to know that your videos always put a smile on my face. I got into cooking for myself last year and KZbin cooking communities like yours were a big part of that. I gotta say, I have learned SO much from watching your videos. The thing I've learned the most is to take out all my ingredients beforehand and set them up like you do! It has created so much simplicity for me now as I'm no longer hunting for the ingredients while I'm trying to cook at the same time. I'm such a scatterbrained and visually impaired so when you lay out everything you're using and go over it, that allows me to do the same thing at the same time LOL I can't wait to try this one!

As someone that is lactose intolerant I've decided that I sub out anything related to cream and milk with coconut cream/milk. I can tolerate a bit of the grated cheeses so I can add a bit of it.

First off your channel deserves far more views, love your no nonsense recipes. A nice tip I learned from ATK, IIRC, is to halve the amount of ricotta and replace it with cottage cheese, this singular step adds so much creaminess and needed moisture to ricotta based pasta dishes.

Ha...I'm glad to see I'm not the only one who pauses and has to move something to a bigger bowl! Sometimes I end up with 2 or 3 bowls I messed and then discarded for bigger bowls. I am going to try a personal "Meatless March" and this would be a perfect dish for that month. All the flavor, no meat.

I used stock instead of cream since it was already dairy heavy and that isn't always my best food group. I also used parchment paper under the mushrooms. Picked it up and they all slid into the bowl. Made it very easy and easy clean up. I have to give this a 10. It was delicious.

Made this last night and it came out great. I really appreciate the layers of flavor in this dish. I almost left out the thyme but I’m glad I ended up putting it in anyway. Roasting the mushrooms in the oven gave it some great depth and the fontina was a nice change from the “usual” cheeses. I did use frozen spinach rather than fresh because I just didn’t have the time and I don’t think it made any appreciable difference. Nice option for a meatless meal! Served it with a side of rapini of course 😁😁😁

Mr. Sip, this big baked pasta dish is excellent for families. Easy to serve, relatively easy to make with ingredients you can find at a supermarket (of course, the Italian store is better). Mushrooms & spinach, a good earthy combo. Italians often will put nutmeg on dark greens. Your bright son corroborates your good taste and wholesomeness.

Making this now and adding chicken I browned the deglazed with cooking sherry and topped on top of pasta mix. Seasoned pasta with Italian season and chicken with Old Bay. Looked amazing going in oven.

Love Fontina. It's such an underused cheese here in the States. I work in a deli that sells Boar's Head, and when people ask for Monterey and Provolone, I always recommend Fontina, too. Great in Mac and Cheese ... and cheaper than Gruyere!!! For now ... anyway ... Tidbit: Grocery item most stolen in Great Britain is cheese! It's a black-market commodity sold to pubs ... Love these non-tomato based recipes. When I was a young, starving teacher, my fav. and common meal was ground beef mixed with cream cheese, sour cream, garlic, onion and served over noodles or mashed. I still make it, but it ain't cheap ... and tough to find cream cheese ... Thanks for posting! Happy New Year to you and your family!!!

I made this for dinner this evening. Rated 9.5 here only because it was not quite as moist and creamy as expected. That was my fault. I didn't have rigatoni so used penne instead. The penne pulled more of the liquid from the sauce. When I make it next time I'll add extra cream or a bit of pasta water.

Made this today, it is just so delicious. The only thing I did differently was add some red pepper flakes to the mixture because I like spicy! And topped it off in the bowl with a squeeze of lemon. Love this recipe.

Tip for getting the olive oil in every nook and cranny of the mushrooms without having to mix as much and waste olive oil....One of my favorite gadgets is the Misto oil sprayer. You just pour in your good olive oil, pump it to pressurize the bottle, and then it sprays like cooking spray. This recipe looks amazing. I want to jump through the screen and devour it. Mmmm. You make the best-looking food. Keep it up.

Your cream based recipes are amazing. I’m sensitive to heavy cream so I substitute Kefir and instantly your recipes have less fat but are still full of flavor. Using kefir, I can make cream based recipes without any guilt. Perhaps this tip will defend against criticism of the healthiness of them. Love your channel!!!
