Recipe:
2 lbs of carrots
2 onions
3 cloves of minced garlic
3 tablespoons of fresh grated ginger
6 to 8 cups of vegetable or chicken broth
2 cans of coconut milk (28oz in total)
Salt and pepper
Coconut oil or butter/olive oil
Chop and dice carrots and onions
Mince garlic
Sauté onions then garlic in butter until soft then add ginger
Add carrots and cook for about 5 minutes
Add broth and cook until carrots are soft enough to puree
Add coconut milk and simmer
Puree, add salt and pepper to taste
Serve with a dollop of sour cream and chopped chives or green onions
