What a great yaoya-san you have! Cross-cut makes things cook faster (so yes, more evenly). It's really good for Brussels sprouts...but Brussels sprouts are not seen in Japan! I love them. Yes, oxalates...you're right. That is very beautiful horenso! Spinach grows in sandy soil, so needs careful washing. In washing hakumai, no need to worry about losing nutrients, because it contains very few! Hahaha. But there are many nutrients in and near the skins of vegetables and fruits, so I never peel them. A small tawashi works great for scrubbing them clean. Sometimes, a big wok can be an alternative to a big pot, especially if you have other uses for a wok. Your "cat's claw" left hand chopping technique is so good! I always use 2 kinds of miso too, but for a different reason: a more complex flavor. (But I never boil miso...always add it after the heat is off.) In speaking of Kagoshima and Satsuma, I think you meant to mention that Satsuma is within Kagoshima Prefecture (right?).
