Here in Brazil we also have a dish with the "un-eaten" pork parts, the sad history is kinda similar... it is feijoada and it is the national dish from Brazil. We eat it like that: rice, feijoada, collard greens, farofa and orange... it is a amazing and I dream of eating soul food one day, it looks absolutly delicious, abraços!
