She literally managed to live to the end of the universe itself in a 100 trillion years when entropy began to take hold. She survived that long. There is nothing she did not overcome.

Lore wise, the time Lords never used to be able to regenerate but they found the doctor as a child and modified themselves to be able to regenerate. This is based of of what we know from Jody Witakers time as the doctor where this is implied. Also in old doctor who, this is further backed as we can assume that the doctor is one of the 3 ruling time Lords named the other.

He wasn't saying me as in himself. He said 'Me' as in the character 'Me.' She outlasts everything in existence until the end of the universe itself. Even then she was keeping entropy at bay from devouring the rest of the universe as the last star burned out. It's hinted at that somehow she is the hybrid. My theory is that she becomes the 'Timeless Child' after the universe dies she goes into the Time Vortex and basically kickstarts the whole thing. Which ultimately, based on the Jodi series, is also the Doctor, eventually.
