I'm new to this.. Can you help me understand Canon's crop factor of 1.6 providing for roughly a 28-63mm? and why it wouldn't be a 28-56mm? Not that it matters in most situations, but I just want to make sure I am doing the math correctly.

yes, you are right it will be 28.8-56mm to be exact, actually i made a mistake while calculating it on the flow..i am sorry for that if it misguided you..thanks for the comment, i have pinned this comment to the top.
