Hi guys, barista here. I love Josh's recipes and try them every time I have the chance but I saw so many wrong things in this video (or let's just say it could be better) that I wanted to give you some tips on cold brew. 1) Try to use a light roasted (almost cinnamon and orange color) coffee beans for better taste. If the beans are dark, as Joshua used in this video, you're gonna get more bitterness and less of the natural coffee taste. Light roasts taste a lot better and more flavourful. 2) Freshly roasted coffee (3-5 days after the roast) should be your top choice. Coffee goes bad one month after the roast. 3) I cannot stress this enough: NEVER EVER use hot water if you're going to put it in the fridge. It's no different than brewing coffee hot and serving with ice. Same taste and everything. The idea of cold brew is to BREW IT COLD. 4) If you're going to strain it through your Chemex or V60, wet the paper filter with hot water, discard the water that drips into your container and wait until both the Chemex (or V60) and container gets to the room temperature. 5) Last but not least would be to serve or drink it with a lot of ice. If you're not going to use ice, try to use cold water instead. Cold brew is almost 2x stronger than hot brewed coffee so you have to dilute it with water. Try these and you'll see that it tastes at least 10x better. Let me know if you have any information that you want to share :)

BARISTA HERE: don’t forget to dilute the cold brew with water!! Cold brew is extremely strong and can hold a LOT of caffeine, sometimes an unhealthy amount if it’s served undiluted. Usually you can dilute it with cold water (after it’s brewed) to a 1:1 ratio. You can adjust it to your liking!

Try adding a cinnamon stick to create a subtle warmth. The ground usually hold up to a 2nd batch. Keep it in the fridge for 24-36 hrs while you drink the 1st batch. Turns out perfectly!

I do mine in a French press. 71g of coffee to 500g of cold water (1/7 ratio). Put the lid on the press but don't press down, chuck that in the fridge overnight. Take it out in the morning and press it down to filter out the grounds. It lasts a couple of days in the fridge, I find it much nicer after about the 2nd day.

@@brandonnvlogs5276 Actually, one of the possible intentions in making cold brew is to unveil the sweeter notes in the natural pre-sugar taste of the coffee you're using, and you do that by minimizing the oil extraction, i.e. by brewing in the fridge and accepting the longer time it takes. Also less oil means it will keep for longer without the taste spoiling from the oils going rancid, also the oils are probably responsible for the uptick in cholesterol numbers some people get after coffee, so fridge-brew is likely more cholesterol-neutral.

Cold brew coffee is sooo good! I love cold brew with coconut milk and even a little bit of cream, not so much that it’s too sweet, but enough to give it a creamy flavor, and sometimes even with coffee ice cubes so it doesn’t dilute the coffee flavor.

I've stumbled on this exact method after a year or so with a dedicated cold brew maker. The filter in the maker started to oxidize leaving a metallic taste to my coffee. After searching around, I decided to get a V60 to filter out the Mason immersion method. The resulting coffee is easily better than anything I can buy commercially. I like the grinds a little finer than suggested in this video however. I find the finer grinds make a slightly stronger and more consistent yield.

For the pour over method, use a metal mesh filter to strain out the larger grinds before pouring over the paper filter. This keeps the paper drilled from clogging up and allows a much quicker straining.

I make my cold brew basically the same way, but with a couple of differences. I use quart mason jars because that is nearly the same size as my French press, which I pour my cold brew into and plunge the grounds out much easier and neater than your demonstrated methods. You’re awesome.

I do method 1 in a tea bag situation with a nut milk bag. I also use coconut water instead of just plain water! It adds a really wonderful sweetness that’s much more complex than what sugar would do!

For filtering, I'd suggest a fine mesh or cheese cloth, then your pour-over filter. The two pass approach means less clogging of the paper filter which makes it faster/uses less filters

Fine mesh polypropylene conical filter is the best I've found so far. Only needs one pass, it's fast and it's easy to clean for reuse. Nothing single-use to throw out like the paper ones, plus I never liked how paper filters "deaden" coffee somehow - I think they don't let any oil whatsoever pass through and that might be why.

if you would have strained it through the cheese clotch and metal filter first, it would straing through the chemex/coffee filter MUCH faster. Also, I found the metal coffee filters work really well at removing grit and allowing the coffee to flow fast.

If you go to your local Chinese market, they usually have tea bags for preparing herbal tea. I double bag a scoop of my coffee in two of these tea bags and dont need to filter at all as a result... I also find that if you put the bags in a jar of 2/3 room temp/cold water and then top up with reasonably hot water the bags float and get directly hit by the hot water, so the hot water gives that brief hot brew to the coffee before cooling down quite rapidly which gives a deeper flavour without risking too much bitterness. I also recommend eating a bit of good feta cheese before drinking your cold brew to bring out all the richer flavours.

This is why I’m enjoying my new cold brew maker with a French press. Instead of having to use a cheesecloth, etc, the French press will push the grounds right down after chilling the coffee for those 24 hours. Yeah, iced coffee is yum, but cold brew is nice and strong how I like it! ☕️ Cold brews and iced americanos are my go 2’s!

Hey, just another way to strain the coffee. If you have a french press (bodum) you can put the coffee into the press and use the press' strainer to filter it. You'll have a small amount of dregs in the bottom but it works pretty well and the French press is more readily available than a coffee filter or cheesecloth.

I just made cold brew coffee for the first time in a large clean peanut butter jar. I used the filter basket and a paper filter from our hot coffee maker to filter it. It worked out pretty well, but I'm thinking of getting some filter bags or something so I can skip having to pour it through the filter basket.

Medium coarse grounds are the way to go but if you have a really good french press, fine grounds will give you incredible results! It is much more concentrated so you will have to dilute it

One shorthand tip from an old restaurant cook who's made a LOT of gallons of coffee over the years: The ratio for classic cold brew coffee is 4:1 water to coarse ground coffee. So, with one cup of ground coffee you'd add 4 cups of water, for 1 tablespoon of grounds you'd add 1/4 cup of water, etc. 4 C. ground coffee + 16 C. water will yield roughly a gallon, minus the water that's absorbed by the grounds. You can make as much or as little as you want, just stick to that ratio. Bonus Suggestions [aka Wisdom Learned From My Mistakes]: - Use a glass container for making cold brew. It's not mandatory, but given the acidity of coffee, cold brew sitting in a metal carafe or bowl overnight will often taste metallic & plastic containers stain & warp permanently. - 8-12 hours is enough time to make cold brew, especially if you're brewing it at room temperature or if you don't want a super-caffeinated end product, but I found that brewing under refrigeration for 16-24 hours had a nice balance of flavours and extracted a lot of caffeine.

Local Roaster or Specialty Coffee Shop. Unless you live in Indonesia like me which you can literally locally source your coffee. However, that's not a fun process. If the coffee farm has a really magnificent quality, the green bean price is skyrocketed like 50 USD / kg. Then if you can't roast your coffee by yourself, you need to spend 2 USD / kg to have your green bean roasted

Pro tip! (I'm not actually a pro but this is good advice) Do both of his straining processes. Straining out all the coarse grounds first then filtering the super fine stuff through the paper after, speeds up the process. Then shoot it straight into your veins. Just my 2cents :)

I've been doing this method for years that most everyone who owns a French press and coffee bean grinder can do: 1. Use the coffee grinder to course grind two to three tablespoons of whole coffee beans. 2. Put the course ground coffee into the empty French press container. 3. Fill the French press container halfway with filtered water and stir the coffee to mix it with the water. 4. Fill the French press container with filtered water to one-inch below the top of the container. 5. Cover the French press container with aluminum foil and let the coffee brew in the refrigerator for 24 hours. 6. at 23.5 hours use the French press plunger to push the coffee down to the bottom of the French press container. 7. Put the French press container in refrigerator for 30 minutes to let the freshly pressed coffee settle. 8. At drink time pour the coffee into two mugs by filling one mug about one-inch then filling the other mug about one-inch. Repeat alternating one-inch pours between both mugs until all the cold brew coffee is poured. After I finish pouring the cold-brew coffee into the two mugs I prepare a new batch of cold-brew coffee that goes into the refrigerator less than five minutes later. The above 8 steps makes two 2-cup mugs of cold brew coffee for me daily. I drink the first 2-cup mug of cold-brew coffee around 3 hours after waking up, which is when my morning energy levels start to dip. I drink the second 2-cup mug of cold-brew coffee around 3 pm, which is when my afternoon energy levels start to dip. This cold-brew coffee doesn't need sugar or creamer or milk added. Enjoy the coffee black. [Edited 3/12/2022 with the below update] 1. Instead of a French press put the coarse ground coffee beans in a 2-liter bottle and fill the bottle with room-temperature filtered water. 2. Put the bottle in the refrigerator for 24 hours. 3. After 24-hours strain the brewed coffee through a steel mesh filter into an empty 2-liter bottle for drinking later. 4. Clean the first 2-liter bottle and prepare another batch of cold-brew coffee for the next day.

a big french press works great too, i use a 1:12 , coffee:water ratio. Room temp water only, coarsely ground, stir it and leave is with the plunger sitting just above the liquid, 12-15 hours is enough and press down. (the stirring should have gotten some of the ground to settle at the bottom, and what you're left with is a strong cold volume of coffee. don't just chug this. This is have the strength of 3 cups of black coffee. add a splash of water and some ice and sip slowly

I see a lot of cold brew methods call for a more concentrated ratio of about 1:5, producing a concentrate that is mixed with water to bring it up to the golden ratio of 1:15 - 1:18. This method has you brew it an already golden ratio of about 1:17.5. My question... which one is recommended? Also, how long will the brew last in the fridge? Thx.

Cafe Bustello espresso grind makes good coldbrew. You mix the coffee and cold or room temperature water in a jar, cover tightly and shake vigorously for a few minutes, let it sit about 5 minutes, shake again, allow to settle either in the fridge or at room temperature for at least 15 minutes. (Use a jar with enough space to allow a few inches headspace above the water.) Very carefully pour into filter lined strainet, leaving most of the grounds on the bottom.

I like to first strain it through a mesh sieve and then put a coffee filter over the sieve and pour it through there again (basically I make a poor man's pour-over) I'm going to try your coffee-water ratio because everyone says something different so I'm constantly playing around with it trying to figure out what I like best. Also:the used coffee grounds make good fertilizer!

I use the 2nd method, it brings out the coffee aroma and tastes better. I also brewed it for 48 hours. The 1st time I'm doing it is by accident. I forgot to filter the coffee I brewed for 2 days and I tried to taste it and somehow it tasted good to me.

What difference does the hot bloom add or subtract to the flavor of the coffee? I personally just stumbled upon my best cold brew batch to date with 1:6 ratio of coffee to water, room temp filtered water, set room temp for 18hrs. Jet black, and enough caffeine to get you to the moon and back

That sounds like a great ratio! Right so the hot bloom brings out some of the brighter notes of the coffee and it also tends to get a more even extraction of the coffee as well. To me it does two things to the flavor. First it makes the coffee flavor stronger in general (with a touch of bitterness), and it also brings out some of the citrusy notes of the coffee. I prefer doing the plain old immersion method, but if you're looking for a flavor switch up, the hot bloom definitely makes a difference. Hope this is helpful! :)

They're both immersion methods, but with a pre-infusion or bloom, you're literally seeing the coffee (if not stale) grow, hence the name bloom. What's happening here is that the gases, majority CO2, are releasing from the grinds. Thus, there is room within the grinds for the water to get in and properly extract. That's the more 'consistent' extraction. More specific tasting notes/flavours will be apparent between different origins, roasts, etc. However, bitterness, acidity, sweetness and body are going to be the more noticeable changes in flavour from one brew to another considering the same bean.

@@HoganLifestyle I usually use whatever my local place has in stock. not sure where the beans are from, I try and get a different roast every time I go. Grind size would be medium, same as I use for my pour over. Cold brew doesn't really matter about grind size because it steeps for so long

i do a bloomed cold brew, but then instead of just tossing it in the fridge, after i add room temp water, i set it in a 150f water bath for 2-3 hours. each hour in the sous vide is like 6-8 in the fridge or on a counter at room temp. also i discovered there're more oils in the strained coffee when you strain it warm, so even if i was doing it overnight, i'd finish it in a bath for an hour or so before straining.

Something I love doing for the sweetner, Maple Syrup. It mixes into the brew quite well vs. granulated sugar or honey (they kinda just glob at the bottom).
