You explain everything so well. The words you use to teach help. I’ve canned for years. I am 75. But your easy to follow demonstrations are so beneficial for those young people just learning. I just found your blog last week and I enjoy having a new family to watch. I grew up on a farm and my family (after I married )farmed during the children’s formative years. Blessings.

I have been making this for years. We love it! I put my jars in the freezer. I have also just put it in plastic containers in the freezer. Both ways work really well and the jelly keeps with no issues. Maggie is such a good helper. I hope she always loves spending time in the kitchen with you. So many memories to be made. Memories that she will always remember.

We only ever add sugar to strawberry jelly. Some folks water bath, some folks don't. Some folks run it through a sieve to get the seeds out, and some folks don't. But everybody needs to ladle that foam off!!!

My dad was 6' tall and all of 145 lbs. In the summer, he'd eat a huge butter bowl of ice cream with a good 1/4 th cup of Mom's strawberry jam on top. Pretty sure she had mixed emotions about that because it sure didn't last long!😂

I'm 62 years old, and I was taught to do jams the same way you do it. It's just because they haven't tested the old ways, to see if they are safe, that they say they aren't safe!

Thank you so much for showing me this way to can jam. My mama and grandma used wax to seal the jam. I have a bunch of strawberries and raspberries in the freezer, and am going to try your method out this week! I really enjoy your videos, so keep 'em coming! Thank you for what you do. PS, your daughter was so proud to be working with you in the kitchen! Awesome!!

Mama always turned the jars upside down so she would not have to use wax on the top she said like you said the air pocket is on the bottom and it seals the top better and keeps it from molding plus it helps them to actually seal faster too because that heat is around that ring just wanted to put that in there cuz a lot of people have been wondering why we turn the jars upside down

I make my jam just like you. I don't know how long you keep them tipped upside down, but I keep them this way about 5-10 minutes just so it naturally heats up the tops and seals as it cools.

❤These strawberries brought back memories of my Mama. She made Strawberry Dumplings and they were so good. I was wondering…when you and your kids are doing something such as making jam, planting different kinds of plants, does this count as Homeschooling as well? It certainly seems like it should. Very few public school kids learn these practical skills. Maggie, you did a great job helping Mama make jam!! You’re a good girl! 🍓

One thing about using pectins: I've found that I sometimes have to let things boil about three minutes instead of one. Especially when I'm making jellies that don't have natural pectin in them, like flower jellies. I don't know if it's altitude or whatever that causes that.
