This is not a knock on Arnie's culinary acumen or his ability to entertain, it's just that a full on very popular YT channel allows him to be fully independent, reach a huge audience, and still make great money.

Hey Arnie, I’m from San Juan, Tx, I graduated PSJA in 1974 and moved to Eagle 🦅 Pass, Tx at the border with Piedras Negras, Coahuila. I have lived in Eagle Pass since 1979. I was fortunate to have met Nacho Anaya Jr. He always spoke about his Dad inventing the original Nachos. I also remember the Round Up Restaurant in Pharrell, Tx, nice Food. The Rio Grande Valley had a nice Mexican Restaurant, el Rex Cafe on 17th St. Such memories.

I just came across this video yesterday evening. It just randomly popped up in my feed. I was having a really bad day! I was laying in bed, crying and feeling overwhelmed when I saw the thumbnail of those nachos. Nachos are one of my favorite foods! You have the most amazing and infectious personality! I grew up in a black house here in tx and we still ate nachos on the regular. Thats how easy they are to make and how good they are. I love seeing recipes for simple foods get a twist to them.

Hey Arnie, I've subscribed to your channel last year because you're the real deal!!! I'm a native born Texan now living in Coastal Georgia. We've met a lot of new friends here and early last winter I pulled out my 8 QT (just a little milder cuz of the wimmin) and 10 QT stockpots and went to town cooking up your exact Texas Style Chili recipe. I let it cool and stuck it in the fridge for a day so it could "marry up". When it was chow time they nearly lost their minds devouring both pots. It even shut up the women's chattering. 😏 KEEP IT UP !!!!!!!!

Grew up in Virginia eating Tex-mex style and now in San Diego eating Baja\SoCal Mexican style. Have eaten Mexican food in CDMX and Merida. Love your recipes señior and inspired by you to travel to northern Mexico and Texas for different styles/flavors/experiences. Muchas gracias guey!!!

I grew up in rural Central West Texas and my mom would make nachos. She would lay the chips down on a cookie sheet in a single layer then put a small slice of cheese and jalapeño on top of each one of the chips. Then put them into the oven, she said this way each chip got the same amount of cheese.

I worked at an American restaurant in the Midwest! We did Mexican Night every Wednesday, The Owner/Chef and I would eat a big platter of Nachos every Wednesday before the dinner rush, He liked flour tortillas cut into chips and deep fried. Recipe was chips, refried beans, seasoned ground beef, tons of cheese melted under the broiler, dressed with fresh Onion, green Bell peppers, Tomato's, and Black Olives!! Salsa and Sour cream on the side!!

I think simple is often better. Just buy the doritos etc brands and You already won. I am not a fan of Flour tortillas cut and fried myself. But I just do the nacho sauce salsa, cheese Dorito chips and heat /nuke in a microwave then add sour cream on top, Simple and still nice

Excellent my favorite! Have been making them since I was 12 but I do bowls of chicken, ground beef and let someone make their own toppings! Have the pie pans ready with the chips and they go down the row of ingredients and choose their own then heat up! I call it a Nacho party also helpful the next day after making tacos and can use up the leftovers 😋 I do also have salsa and guacamole on the side for toppers just pour on top after pulling out of the oven Best EVER! 😋

I believe the nachos with the beans, peppers and cheese were called perricos. Those with meat and more had another name I can’t recall. Lived in C. Acuna, Mex for about 8 years. Love your show

Texan here too, OMG made my mouth watery. Just the way we ate them as kids with Chicken or Beef Fajitas or sometimes carne picada and shredded cheese. 😋 Now I make it with Juanita’s nacho cheese.

I went from using water to milk and eventually started using chicken broth and a little butter. I melt the butter and then put the broth in(a whole can for two can of condensed cheese) once the broth starts to boil slowly add the cheese and it’ll loosen up quickly.

We like to do nachos with ground beef, sauteed onions and garlic and crushed tomato... refried beans on tostada chips, with cheese on top, a bit of sour cream and then green onions. Definitely want to try it with skirt steak like you did with the botana, that looks freakin. fire. @ArnieTex

Panchos are unheard of anywhere but the RGV. Panchos were a Sunday Evening after church tradition at the ESP Restaurant in Mission during the 80’s. The ESP would also put onions on with the cheese, then after heating they would put some tomatoes on the top

Good God, if it's one thing I miss about moving outta the Valley are the botanas. My family and I used to get a botanas from a restaurant in Mercedes. Great food and memories

I use to work at an AMC Movie Theater when the nacho craze started and we had a crock pot that we would put the canned nacho cheese (cheddar cheese) into it and then would open a jar of Jalapenos and drain that water into the the cheese with regular water for a spice kick. Then you put water into the jar to use again later for the next batch. You wanted to thin the cheese out so it flowed better on the chips. No one does that now days.

Love this style with yellow “nacho” cheese but I’ve never heard it called authentic here in SoCal. When I think authentic here I think queso fresco, black or refried beans. Guess it all depends on where you’re from, both are amazing
