I just came across this video yesterday evening. It just randomly popped up in my feed. I was having a really bad day! I was laying in bed, crying and feeling overwhelmed when I saw the thumbnail of those nachos. Nachos are one of my favorite foods! You have the most amazing and infectious personality! I found myself smiling and laughing and thoroughly enjoying the video. I instantly subscribed to your channel. All of the food looks so delicious! I just wanted to say thank you. Not just for the wonderful videos and content, but for you just being you and putting a smile on my face! Needless to say, I will be spending the rest of my weekend binge watching all of your videos! I grew up in a black house here in tx and we still ate nachos on the regular. Thats how easy they are to make and how good they are. I love seeing recipes for simple foods get a twist to them.

Maybe a guest appearance on a food network show or something like Bon Appetit here on YT. This is not a knock on Arnie's culinary acumen or his ability to entertain, it's just that a full on very popular YT channel allows him to be fully independent, reach a huge audience, and still make great money.

He isn’t screaming and running around in a ridiculous challenge to be on FN anymore. They forgot to have humans cooking recipes except for a few brief hours every few days, we can source, learn, even shortcut shows, about 20 years ago 😞

Hey Arnie, I’m from San Juan, Tx, I graduated PSJA in 1974 and moved to Eagle 🦅 Pass, Tx at the border with Piedras Negras, Coahuila. I have lived in Eagle Pass since 1979. I was fortunate to have met Nacho Anaya Jr. He always spoke about his Dad inventing the original Nachos. I also remember the Round Up Restaurant in Pharrell, Tx, nice Food. The Rio Grande Valley had a nice Mexican Restaurant, el Rex Cafe on 17th St. Such memories.

Love that you're doing texmex right. As a Texan, it's bugged me my whole life how some people act like texmex isn't "real" Mexican food. Like bro, I've eaten texmex all my life, and almost always eaten in restaurants owned by Mexican American families and prepared by Mexican Americans hands. Hell, we never even called this texmex, it was just "Mexican food."

Yes, I am 68 years old and living in southeast Texas all of my life and I don’t remember Tex-Mex used to describe food until maybe 30-40 years ago. It was just Mexican. No one talked about authentic, original or traditional. Now some people wear it like a badge of honor or in other cases to belittle the food like, that isn’t authentic Mexican, that is only TexMex and not traditional or we only cook original Mexican. My history books said that Texas was part of Mexico at one time. I guess if a food was created on one side of a line on a map, it somehow changes it heritage. 🤣🤣🤣 Hear, hear! Here’s to the Mexicans and their ancestors who gave us one of the World’s great cuisines!! 👍🏼👍🏼👍🏼

Hey Arnie, I've subscribed to your channel last year because you're the real deal!!! I'm a native born Texan now living in Coastal Georgia. We've met a lot of new friends here and early last winter I pulled out my 8 QT (just a little milder cuz of the wimmin) and 10 QT stockpots and went to town cooking up your exact Texas Style Chili recipe. I let it cool and stuck it in the fridge for a day so it could "marry up". When it was chow time they nearly lost their minds devouring both pots. It even shut up the women's chattering. 😏 KEEP IT UP !!!!!!!!

I grew up in rural Central West Texas and my mom would make nachos. She would lay the chips down on a cookie sheet in a single layer then put a small slice of cheese and jalapeño on top of each one of the chips. Then put them into the oven, she said this way each chip got the same amount of cheese.

Grew up in Virginia eating Tex-mex style and now in San Diego eating Baja\SoCal Mexican style. Have eaten Mexican food in CDMX and Merida. Love your recipes señior and inspired by you to travel to northern Mexico and Texas for different styles/flavors/experiences. Muchas gracias guey!!!

I worked at an American restaurant in the Midwest! We did Mexican Night every Wednesday, The Owner/Chef and I would eat a big platter of Nachos every Wednesday before the dinner rush, He liked flour tortillas cut into chips and deep fried. Recipe was chips, refried beans, seasoned ground beef, tons of cheese melted under the broiler, dressed with fresh Onion, green Bell peppers, Tomato's, and Black Olives!! Salsa and Sour cream on the side!!

I think simple is often better. Just buy the doritos etc brands and You already won. I am not a fan of Flour tortillas cut and fried myself. But I just do the nacho sauce salsa, cheese Dorito chips and heat /nuke in a microwave then add sour cream on top, Simple and still nice

I believe the nachos with the beans, peppers and cheese were called perricos. Those with meat and more had another name I can’t recall. Lived in C. Acuna, Mex for about 8 years. Love your show

Thank you for the video. HOLY MOLY Arnie.... You hit me right in the way-back nostalgia spot when you talked about working overnight at a convenience store. I did that for tooooo many years while working my way through college. We did not yet have the iconic pot-o-nacho cheese but DID get microwavable burritos in later years...

As a child growing up in the 1980's. Going to the Round Up was one of my favorite restaurants because of the botana. Many great memories of enjoying dinner with my family.

Texan here too, OMG made my mouth watery. Just the way we ate them as kids with Chicken or Beef Fajitas or sometimes carne picada and shredded cheese. 😋 Now I make it with Juanita’s nacho cheese.

Great video. I am so glad I found you. I never knew there were different stages or name for nachos however they are 1 of my absolute favorites but when we moved to AZ many places don't serve them because they claim they aren't authentic.

Excellent my favorite! Have been making them since I was 12 but I do bowls of chicken, ground beef and let someone make their own toppings! Have the pie pans ready with the chips and they go down the row of ingredients and choose their own then heat up! I call it a Nacho party also helpful the next day after making tacos and can use up the leftovers 😋 I do also have salsa and guacamole on the side for toppers just pour on top after pulling out of the oven Best EVER! 😋
