You could cook the pears down first and add a bit of corn starch to thicken the juice.

I like the peach cobbler like this, but don't care for fresh pears or the fall spices. I will eat canned pears in a hot fruit compote (with other fruit-peaches, pineapple, cherries and spiced apple rings) or that pear salad with the dollop of mayo and grated cheese on top but that's about it. My granny had a pear tree in her yard--those pears were not edible fresh, but she made pear preserves every year out of them. Cook them and cover them in enough sugar and you didn't know they were pears!
